    Kugan's Kitchen Part 6

Hello Aarthii, I feel very shy to see you post
For I know that I still owe you the vallarai recipe.
Do not worry it will come soon.

I have posted the cream of mushroom soup before.
I am re posting it for you again.
Are you looking for such recipe or, different type, let me know.
    Here enjoy. Kugan

    MUSHROOM SOUP

    Ingredients:

500 grms of any fresh white mushroom, (like button mushroom) sliced.
    1 tbs lemon juice
    2 tbs minced small onions
    1 tbs butter
    1 tsp dried thyme
    1 tsp salt
    ½ tsp ground pepper
    1 bay leaf
    2 cups heavy cream
    1 ½ cups vegetable broth
1 tsp cornstarch dissolved in 1 tbs water
    Minced coriander for garnishing.

    Method:
In a food processor coarsely chop mushrooms and lemon juice.
Melt butter in a pot, add in the small onions and sauté.
Add in the mushrooms, thyme and bay leaf.
Sauté over medium heat for about 10 minutes.
Add salt, pepper, cream and vegetable stock.
Bring to boil and simmer for about 20 minutes
Add cornstarch and simmer for another 10 minutes.
Stir constantly, check for seasoning, add more lemon juice if needed.
Remove and serve with little coriander leaves.
    Chefs are just like children.
They should be seen not heard.

Dev, specially for you... taken in Penang (at Burmah Road opposite Pulau Tikus Police Station) recently.

the appam, made the traditional way (man chatti, charcoal), is just 70 cents each....

She said that she was very grateful to me for, she full filled her grandmas last wish.
I feel very sad to hear the news, at the same time I am happy that I made a soul happy.

    Sorry to hear this... RIP...

Here's my all time fav soup,Aarthii... Hope u like it...

    Cream of mushroom soup:

    1. Heat a tsp butter/oil. Add in 2 cloves of garlic crushed & saute for few secs. Don't let it brown.

    2. Add in 1 packet(200gmms) of button mushrooms roughly chopped, salt, pepper pwd. saute for 2-3 mins.

3.Add 500 ml water and cook for 1 whistle or 7-8mins if not using pressure cooker.

    4. Reserve some mushroom pieces for garnishing. let cool & puree the rest.

5.Add the puree back to the pan. Adjust salt, pepper. Add some milk(50 ml or more) & heat it through. Do not let come to a boil.

    6. Garnish with reserved mushrooms and serve hot with garlic bread

Note: U can add a tsp of wheat flour or maida after sauteeing the garlic. Keep frying on low flame till flavourful & then add the mushrooms. u can add lil more water in this case but still get thicker soup. I add wheat flour attimes...

If u want a mushroom clear soup, stop at step 3. Add some spring onion greens or coriander for garnish and serve hot.
