very similar to scrambled cauliflower recipe I posted earlier.

    Spicy mixed vegetable curry:

Grind to a paste -5 cloves garlic, 1" ginger, green chillies, 1 clove & 2 cardamom, 1/4 tsp peppercorns, 1 tsp cumin & red chilli pwd, turmeric pwd.

Heat a tbsp oil. Add 1 medium onion chopped fine. Fry till light brown.
Add in the paste & cook for 4-5 mmins.
Add puree made from 2 tomatoes.Cook till dry & raw smell goes off.
Add in mixed vegs-cauliflower,carrot, beans,cabbage,peas(2 cups), salt, lil water. cover & cook till almost done.
Add in 1 tsp cornflour mixed with water & let boil till raw smell goes away.
Add 1/4 cup milk & let it come to a simmer. Do not let it boil.Switch off
    Garnish with coriander leaves.

    Serve with roti.

    3 C sandwich:

Heat oil. Add jeera & let it brown a bit. Add in chopped onions & fry for a min.
Add in shredded Carrot, chopped Capsicum, shredded Cabbage & chopped tomatoes. Saute for 3-4 mins until the vegs r half done.

Add in salt, pepper pwd, kitchen king masala & fry for a min.

Add in chopped cori. leaves & mix.

Stuff it between 2 slices of bread & toast it in a sandwich toaster. Yum!!!

Serve with tomato sauce if preferred.

    Variation:

Add lil cheese to the stuffing.

Don't make the stuffing too dry. Juicy stuffing is what we r looking for.
