    Pajeri Nenas (kugan)

    [tscii]Dev, this dish has a aroma and unique taste of its own.


    PAJERI NANAS

    Ingredients:
    300 grms sweet fresh pineapple pieces cut into small chunks
    3 shallots sliced
    2 pips garlic chopped
    2 green chillies sliced into two
    1 sprig curry leaves
    2 tbs of meat curry powder mix with water to make into a paste.
    1 tbs finely grated ginger
    1 ˝ tbs of kerisik ( fried coconut paste)
    2 cups of thin coconut milk
    Salt to taste

    To Season;
    2 tsp oil
    3 star anise
    3 cardamom pods
    2 inch cinnamon sticks
    ˝ tsp of aniseeds

    Little brown sugar

    Method:
    Heat the oil in a cooking pot. Add in the spices to season.
    Let them splutter, add in the sliced shallots, garlic, curry leaves
    and grated ginger. Sauté until they are aromatic.

    Add in the curry paste, stir vigorously, let it cook for 5 minutes.
    Add little water if needed.
    Now add in the pineapple, green chillies and the coconut milk.
    Stir , cover and cook for about 10 minutes, until the pineapple softness.

    When the pineapple is soft add in the kerisik, the brown sugar.
    Stir until it dissolves, cover and let it simmer until the curry thickens
    on low heat. Remove and serve with ghee rice or white rice.

    To Make Coconut Paste:
    Take about 5 tbs of desiccated coconut.
    Fry it on low heat stirring from time to time.
    The coconut will become dark brown in colour.
    Transfer the coconut to a mortar.
    Take a pestle and grind the the kerisik till it becomes
    a smooth paste.

    Try and avoid coconut milk in your food, it is very high in fat !!

    PS, amma kitta ketu engalukku paruthi vadai recipe sollungale...

    Yes, coconut is very high in fat & so it's a high calorie food...

    Yeah True I've never added coconut milk while am preparing

    Welcome back Kugan,
    We missed you. How is your doing now. It is hard when gets sick. My prayers for her to get better soon and for you also. It must have been tough.
    I am so touched that you remembered me during your difficult time. Thanks nga. The party went well. I had made Kushka rice, meat-ball curry, mutton fry, chicken fry and C-65 for non-veggies. For veggies Mattar paneer, Veg Khorma, Potato dill fry, Mullani sambhar and Sooraikai kootu. Dessert was carrot Halwa, Gulab Jamoon and Mango Ice-cream. Ellam Kali!!. It was back breaking work but definitely worth the effort.

    Thanks for all your help and encouragement. Thanks for all the friends for the appetizer ideas. This is a great thread.

    ofcourse, i can understand how much hectic it will be.
    if have party athome, i dont feel like going into the kitchen for one week.
