Potato Salad
A few months ago, when I had gone for a buffet, I had seen & tasted Potato Salad- It was boiled & mashed Potatoes, with lors of chopped onions, tomatoes , a dash of pepper & a lil cream.
I was wondering if I could eat this Potato Salad for a meal( minus the cream) if I can skip the rice one day ( so that there is no excess carbohydrate intake). Health Expert Hubbers, pls advice.

Thanks a lot for the recipes, Solona & Ayesha!
Just tell me, should I eat this INSTEAD of my rice/carb intake?
