    Potato Salad

    A few months ago, when I had gone for a buffet, I had seen & tasted Potato Salad- It was boiled & mashed Potatoes, with lors of chopped onions, tomatoes , a dash of pepper & a lil cream.

    I was wondering if I could eat this Potato Salad for a meal( minus the cream) if I can skip the rice one day ( so that there is no excess carbohydrate intake). Health Expert Hubbers, pls advice.

    300 g potatoes boiled peeled and mashed
    1 oinion cut into small and thin strips
    1 tomato cut into small cubes
    2 boiled eggs (take away yolks if you are in diet)
    4 tablespoons of olive oil
    1 spoon of vinegar
    1 teaspoon of garlic paste
    coriander leaves chopped
    bread crumbs
    salt
    pepper

    In a wok saute the onions in a bit of oil until they turn brown, add this to the mashed potatoes, add tomatoes, eggs and mix well.

    In a bowl add the olive oil, vinegar, garlic paste, salt pepper and beat well until it forms a sort of cream and pour over the potaoes mixture and mix well add bread crumbs coriander and serve. This is good light calorie potatoe salad

    mashed potato salad

    boiled mashed potatoes - 2 cups
    finely chopped celery - 2 tbsp
    whipped cream - 2 tbsp
    finely chopped onion - 2 to 4 tbsp
    milk - as required if too dry
    vinegar - 2 tsp
    finely chopped green capsicum - 2 to 4 tbsp
    chilli powder, salt and pepper - to taste

    combine all together and serve.

    instead of vinegar, u can add sour cream
    also, mayonnaise , if u like

    garnish with chopped spring onions

    just cut off the cream from the recipe..if u like it a bit more wet, add skimmed milk...

    chopped garlic, tabasco sauce, chopped parsley, chopped boiled eggs, lemon juice, etc etc etc.... just add anything to the mashed potatoes...they are yummmm...
