    Take a skewer used for grilling or the needle used to fry pappadum, and pierce in 3 coconut pieces (thenga bathai), 4 numbers of long dried red chillies (kaanja milagai) and show in a blue flame so that they slightly become black on all sides. Add a piece of dried tamarind and salt to taste and grind to a smooth paste (for better taste use the traditional ammi) with a little water. Add in a teaspoon of coconut oil and use it as side dish for rice.

    Thogayal is called "Chammanthi" in Kerala. South Keralites make a "podi" powdery stuff (just like idly molaka podi) and call it "Chammanthi podi" too. Chammanthi is of two types. That which is used to dip-in (like sauce) for idlies and dosas and that which is licked with the fingers, when having rice!

    Fried Chammanthi- this recipe was given by a friend's mom-

    Roast Red Chillies, Small red onions, & garlic well with minimum oil. Add grated coconut & roast until its brown. Make sure its not burnt. Cool this mixture & grind smooth along with a lil tamarind water & salt. It should be of solid consistency- the one u can roll & put in a dish.

    PS: Sorry, I can't mention the quantities accurately. Usually, I take 6 red chillies (dry variety), a handful of red onions, a few pods of garlic & 5-6 tablespoons of grated coconut.

    Thank you Braandan and Alan, for the recipes. Will try them and let you know.

    Meanwhile, thought of sharing this simple recipe with you. Grind together roughly sliced onions (big onions), red chillies, little tamarind and salt. Mix a little coconut oil with this paste. We usually takes this chammanthi with coconut dosa for breakfast.

    Tamarind paste,green chilies, pearl onions and salt.Mash and mix all these.Add some coconut oil to this.

    Good for curd rice.Try it.
