Veg Fried Rice - This is a Chinese version.

Veggies - all kind of assorted vegetables.
Some of which i use are,
    Shredded cabbage,
Peas (cooked if you use dried ones or uncooked if frozen or fresh),
    Sliced Mushroom (for bite),
    Shredded carrots,
    Onions sliced,
Green chilles sliced finely or shredded.
spring onions shredded (reserve the green parts for garnish).
Dark Soy sauce - 2 Tbsps. U could use the 4 Tbsp of lighter Soy sauce if u want the rice to retain white colour.
    Eggs - 2 (optional)
Any other combination of vegetables can be used (i am not into using peppers/capsicum in fried rice as they give a raw smell and taste).

Heat the wok. It should be very hot.
Pour some oil in the heated wok and all the vegetables.
The whole cooking process will be completed in 5 to 7 mins time and have the stove at the highest heat during the entire process(could reduce the heat a little if you are not comfortable with high fire).
Stir fry the vegetables till cooked (since all of them are sliced or shredded takes only a couple of minutes).
Add cold cooked rice to the vegetables.
Stir the rice and add the Soy sauce and salt (a little bit less than you would normally use as Soy sauce is salty).
If using the eggs, break the eggs and add it to the rice and keep stirring the rice. The egg when cooked will give a nice white-yellowy look to the rice.
Remove from fire and garnish with the green parts of the spring onions and pepper powder if you want it hot.
Tastes yummy and doesn't take much time and esp good if you use some left over rice.
