    Hi Noodles,

Roast duck (u can replace it with chicken)

    1 whole duck
    for marinade
1 cup of black soy sauce
1 table spoon of ginger garlic paste
1 teaspoon of red colour powder
1 table spoon of 5 spive powder (you will find in chinese shops)
    1 tablespoon of oyter sauce
    salt pepper
Marinate the duck in the above ingredients for about 4 hours turning now and then. Heat your own to 200° and bake the duck for atleast 45 minutes(the duck should we well cooked so if needed for more longer) and apply the marinade paste on the duck on all the sides every 15 minutes so that the skin will not be dried up.

take out the cooked duck cut into small pieces, fry 1 onion with a tablespoon of garlic ginger paste and tablespon of ayster sauce and pour on the duck pieces and serve hot with fried rice.

    Caramel chicken

1 kg of chicken cut into pieces
    1/2 tablespoon of sugar
    1 onion
    1 tablespoon of garlic paste
1/2 cup of oyster sauce/or soy sauce

fry the chicken pieces in a small amount of oil for about 10 minutes and then add onion, pepper fry at lower heat for 5 minutes, add garlic an the sugar. The chicken pieces will caramelize in the sugar, nopw add the soy oroyster sauce and add 1 cup of water let cook at low heat until the water evaporates and gravy becomes thick. Salt at last because the soy and oyster sauces are already salty

    Mutton chilli soy

    Mutton cut into strips
    1 onion
    1 Tbs od garlic paste
1 tbs chilli paste (asian chilli red paste u will find in asian grocery shops)
1 table spoon of fish sauce (Nuoc Mum)
1 table spoon of soy sauce
    1 red capsicum
1 greeb capsicum (both cut into strips)
    baby corn 1 /2 cup

fry the mutton with onion and garlic for 5 minutes at low heat add the chilli paste, and the sauces and the capsicum fry and add a bit of water and then add the baby corns, simmer and cook at low heat until done.

    Wonton
    minced chicken 500gms
    minced onion 1
    garlic paste 1/2 tablespoon
black mushrooms (chinese ones) minced 1/4 gup
    salt pepper
    1/4 cup of fish sauce

25 wonton sheets (chinese grocery freezer)

mix all the ingredients and place i spoon in the midlle of the square shaped wonton sheets bring all the ends togather as a pottalam and stick (defrosted sheets are a bit sticky so the stick easily) and now steam them in a steamer or idli cooker.
