In kadai/wok add oil/ghee and saut the cumin seeds, cloves and black peppercorns.

Cut the cashew nuts into halves and add in the kadai, add the rice, salt as per your taste and cook the rice with minimum of water.

Serve the rice with any Dal/Veg or Nov Veg Curry.

    BUTTER RICE

    4 cups basmati rice
    250 gm butter
    1 big onion sliced,
    1 big tomato chopped
    3 red chillies (strips)
    daun pandan (gragrant grass)
ginger-garlic paste with cashews and almonds
    cinamon and star anise

Wash rice, rinse, add a little bit of butter in a wok and fry the rice until fragrant. Put it into the rice cooker.

Put half the butter into a wok, once butter melts, add cinamon and star anise. Then add onion, tomato, chillies, daun pandan and ground paste one after another.

Fry until the oil separates from ingredients. Then add the remianing butter. Cook until butter melts.

Pour this into the rice cooker and add 6 cups of water. Add salt, stir and let it cook.

When half cooked, open rice cooker and mix it again.
When rice is cooked decorate with corainder leaves.
