    KARAHI CHICKEN

    chicken - 1, skinless, cut into pieces, marinated in 1lemon juice/ 1 tbsp sour curd and salt for 1/2 an hour (u can use boneless) place chicken in a tbsp of oil on a heated non stick and brown all sides.

    oil/ ghee - 2 tbsp
    ginger paste - 2 tbsp
    garlic paste - 1 &1/2 tbsp
    turmeric - 1/4 tsp
    chilli powder - 2 tsp
    coriander powder - 1 tsp
    salt
    onion - 2, chopped
    spring onion - 3 , chopped
    tomato - 2 chopped, finely
    greenchilli - 3

    dry roast and powder the following:
    2 cardamom
    5 cloves
    1 stick cinnamon
    1 tsp cumin

    1. heat oil/ghee and add ginger and garlic pastes. when golden add the spice powders.fry but dont burn.
    2. add the onion and fry well, followed by the tomatoes.
    3. add the browned chicken and salt . add very little water and cook till done.
    4. sprinkle the powdered garam masala and mix well.
    5. sprinkle chopped coriander and serve.

    Chicken -1, cut into pieces (marinate in 4 tbsp curd, turmeric and salt overnight or atleast 2 hrs)
    green capsicum - 1, cut into 4
    red capsicum - 1 , cut into 4
    chopped onion - 2
    chopped tomato - 1
    tomato puree - 2 tbsp
    garlic paste - 2 tbsp
    ginger paste - 3 tbsp
    red chilles powder - 2 tsp
    coriander powder- 1 tsp
    cumin(jeera) powder - 1/2 tsp
    tumeric - 1/4 tsp
    Garam masala - 1 tsp
    salt to taste
    oil - 2 tbsp

    1. Heat oil in a pan and fry the onion till golden and then add garlic and ginger paste ,fry.
    2. Add the chicken and salt.
    3. add all the other items, fry a few minutes.
    4. add needed water and cook till done.
    5. serve topped with chopped coriander.

    heres a CHICKEN BIRYANI

    for masala:
    chicken - 1, cut into pieces(or 8 chicken drumsticks/thighs)
    (add a few tbsp of sour curd , turmeric a few pinches, a tsp of garam masala and salt, marinade for 2 hrs.)
    oil/ghee - 1/2 cup
    onion - 1 & 1/2 cups, sliced
    tomato - 2 nos, chopped
    ginger - 4 tbsp paste
    garlic - 3 tbsp paste
    green chillis - 5
    red chilli powder - 3 tsp
    coriander leaves - 1/4 cup, chopped
    mint leaves - 1/4 cup , chopped
    salt

    for rice:
    basmati rice - 2 cups, soaked for 1/2 an hour
    whole cardamom - 2
    cinnamon -2 sticks
    cloves - 6
    shah jeera - 1 tsp
    bay leaf -1
    saffron - a few strands
    salt

    lemon juice - of 1 lemon

    dry roast and powder : 1 cardamom, 1 small cinnamon, 3 cloves, 1 tsp cumin

    1. heat oil/ghee, add onion and fry till brown. add ginger garlic pastes and fry more.
    2. add the other masala items and fry along with chicken and marinade.
    3. sprinkle water and allow to cook covered.
    4. when done it must be dry.

    1. meanwhile boil 4 cups water and when boiling add all the items for rice. simmer covered till 3/4th done.
    2. now to this add the chicken masala and lemon juice.
    3. dum cook till done.
    4. before serving sprinkle the dry roasted powder and mix without breaking the rice.
    5. garnish with fried nuts, boiled eggs, and accompany with raita, bagare baigan, etc.
