    A simple mango salad :
    3/4th riped mango- peel & cut into long thin strips...add thinly sliced red onion about 1/4 of a red onion.....then add corriander leaves about 1 tblspoon finely cut.....add red & greem bell pepper little of each thinly sliced.....add green chillies to your taste.....add salt, sugar & lime juice....& then 1tablespoon of coarsely ground peanuts.....enjoy!!!

    melon medley

    1 ripe mango - peeled, cut into cubes
    1/2 sweet melon - peeled, cut into cubes
    cantaloupe/ honey melon etc, can also be used
    lemon juice - 2 tbsp

    mix and serve chilled

    POTATO AND PINEAPPLE SALAD

    small cubes of pineapple - 1/4 cup
    boiled cubed potatoes - 2 cups
    red capsicum - 1/4 cup
    spring onion leaves - 1, chopped
    cooked corn kernels - 1/4 cup
    2 tbsp of mayonnaise
    chopped walnuts for garnish

    mix all and serve

    BEAN SPROUTS SALAD

    bean sprouts - 1/2 cup
    cucumber finely chopped - 1/2 cup
    small red radishes (radicchio) - 3- 4 nos. chopped
    lemon juice
    seasoning
    mix well and serve on a bed of lettuce leaves, sprinkled with skinned, chopped almonds.

    CAULIFLOWER SALAD

    crisp cooked cauliflower florets -1 cup
    (just put in boiling salted water with a spoon of vinegar for a few minutes)

    spring onions - 1/4 cup,chopped

    chopped fresh mushrooms, sauteed and cooked in one or 2 tsps. of butter - 1/4 cup

    grated cheese - 1/4 cup or less

    french dressing(vinegar+oil+seasoning)

    mix all together and serve.

    PASTA SALAD

    very fresh yogurt - 1 cup, beaten
    honey - 2 tsp
    cooked pasta - 1/2 cup
    green apple, peeled,cored and cubed - 1 no.
    mayonnaise - 1 tbsp(optional)

    mix all together and serve garnished with chopped walnuts.

    NICOISE SALAD

    green beans - 1 cup, steamed and cut
    boiled potatoes - 1 cup, cubed
    onion - 1 small, chopped
    tomatoes - 1 , chopped
    boiled egg - 1, chopped
    olives - 10, stoned
    tuna - 1 can, optional
    parsley - 2 tbsp, chopped
    vinegar, salt and pepper

    mix all and serve on a bed of lettuce.

    the recipe calls for some capers, but i dont use it....

    Broccoli Salad

    I just love broccoli and am eating a yummy salad right now!!

    Steam broccoli just right, so that it still retains its crunchy taste
    Squeeze some lemon juice, salt and 1 tsp of olive oil over it
    Let it stay for an hour or two

    That is all to a healthy, delicious salad!

    this month it has been raining a lot now and then here, and the climate is like we are in a hill station...
    there were instances of people even getting stuck in the wadis flash floods and saved by helicopters...
    who says this is a desert

    eating hot cauliflower pakodas....
    a bowl of thinly sliced cauliflower
    in a separate bowl mix in 2 to 3 tablespoon of besan + needed salt, chilli powder, cumin powder, garam masala powder, a pinch of cooking soda(optional)
    sprinkle on the gobi and mix without water
    deep fry...yummmmmmm
