hi
in the same easy chicken marinade i made yet another variation yesterday (we had gone out with a group of friends to a garden to eat...the item i had to prepare was chicken)
in the same marinade for EASY CHICKEN add the following:
1. shah zeera powder - 1/4 tsp
2. almond paste - 2 tsp
3. cashew paste - 2 tsp
4. coconut paste - 2 tsp
Method is the same.
it is a mughlai type of marinade and it turned so yummy....we were around 12 people and i had made with 4 chicken....nothing was left

EASY KEBABS
chicken breasts, cubed - 500 gms
white vinegar - 2 tbsp
sugar - 1 tbsp
salt , pepper
chilli powder - 1/2 tsp
soya sauce - 4 tbsp
tomato ketchup - 6 tbsp
garlic paste - 1 tbsp
onion paste - 3 tbsp
green pepper - 2 nos, cut into cubes
1. mix all ingredients and leave overnight.
2. thread chicken and capsicum alternatively on a skewer.
3. grill till done and brown.

CHICKEN ROLLS
chicken breasts - 4
spinach leaves - 8 leaves (large), blanched i.e.,put in boiling water and taken out immediatly.
feta cheese -1 cup, crumbled and mixed with 2 cloves garlic , minced
pepper
salt
for coating:
egg - 1, beaten, seasoned with salt and pepper
flour - 2 tbsp
bread crumbs
oil
1. place breasts in between plastic sheet and flatten (using a rolling pin/ back of a bottle). sprinkle with salt and pepper.
2. spread spinach leaves on it. spoon the feta on the spinach.
3. roll tightly and secure with a cocktail pick.
4. dip in egg, then roll in flour.
5. dip again in egg and roll in bread crumbs.
6. chill for 15 to 30 minutes to make them firm.
7. deep fry in heated oil till brown.
8. drain on kitchen paper.
9. cut in to slices and serve with yogurt cucumber dip or a dip of ur choice.

CHICKEN CUTLETS
Chicken - 200 gm, boneless, minced finely
Onion - 2 ,finely chopped
Green Chillies - 2 (finely chopped)
Boiled Potato - 1 (peeled and mashed)
garam masala powder - 1/4 tsp
Lemon juice - 1 tsp
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Pepper powder - 1/2 tsp
Turmeric powder -1/4 tsp
Ginger-garlic paste - 1 tsp
Salt
coating:
plain flour
Bread crumbs
Egg - 1 , beaten , seasoned
frying:
oil
1. mix all the items with chicken mince and keep for 15 minutes.
2. Now make cutlets. Dip in the flour, beaten eggs and roll in the bread crumbs.
3. Heat oil in a kadai . Deep fry till golden.
note:
chill the crumb coated cutlets for an hour before frying.

MUTTAI KUZHAMBU
boiled eggs - 4
oil - 3 tbsp
curry leaves
grind together:
onion - 1
tomato - 1
garlic - 5 pods
grated coconut - 4 tbsp
coriander leaves
green chilli - 2
salt
turmeric - 1/4 tsp
chilli powder - 2 to 3 tsp
coriander powder - 3 tsp
cumin powder - 2 tsp
fenugreek powder - 1/2 tsp
tamarind - lemon size, soaked
besan/ gram flour/ kadali maavu - 1 tbsp diluted in 3 tbsp of water.
1. heat oil add curry leaves and the ground paste. fry till oil separates.
2. add spices.
3. add the tamarind water. boil for some minutes till thick.
4. add the eggs (make holes with a fork), and the besan water, keep stirring till thick.
5. check salt, and serve hot.

I tried Muttail Kulambu on Thursday. Qty of Tamarind was bit more, it turned out like Vatha Kulambu.
Whether we need to add garam masala.
