    Does anyone know how to make the thick payasam, we usually get in Ayyappa temples; esp.in Sabarimala? It is called Saravana or Aravana payasam,i think!

    I have not "seen" this being prepared, as usually entry to temple kitchens are restricted. My mother told me the method (modern method using pressure cooker etc. although traditionally it is made in big "Charakku"- traditional heavy bronze vessel, typical to Kerala.)
    Roast raw rice (say one cup)in low flame in a dry kadai for some time, and keep aside. Clean jaggery (preferably traditional achchu vellam) powder it somewhat (about one cup). Add two cups of water to jaggery and boil until it becomes a gel "paagu". Keep aside.
    In a pressure-pan put the roasted rice, add two times water and cook (three whistles & ten minutes). Open and pour in one cup of melted ghee and again cook the rice in ghee for about 10 minutes. Add in the jaggery gel and cook again for 10 minutes stirring constantly in low flame. Powder cardomom (four numbers), powder dry ginger (chukku) one teaspoon, powder pepper half teaspoon and add to paayasam. This paayasam is usually never made just to eat. It is to be offered to Goddess (best for Lalitha Sahasranama) or Ayyappa or Ganesh or any of your Ishta-devata, and then eaten as prasaadam.

    I had tried everywhere & asked all those whom i knew about this payasam....at last i've got the method , thanks a lot to you. Yes, this is basically a payasam for 'naivedhyam' only; once i try it out i'll let u know how much we enjoyed it. Thanks once again.

    hello ramadas,

    tried ur payasam recipe for saraswathi pooja, but it is unbelievable, so tasty. Since, i preferred it thick, it was like different version of sarkarai pongal.

    I must say the payasam tasted really splendid ; my cousins & I had made it for a pooja function back home & most of the guests thought it was a temple prasadam !!

    I have not yet tried due to restriction. However,
    I add on the "Avul" or "Wheat" also can be used instead of raw rice.
