[tscii]Rose here is your request.
Its a very tasty and nutritious dish.


DAL MAKANI

Ingredients:
150 grms whole urad dal
50 grms rajma
50 grms channa dal
2 large tomatoes finely chopped
2 onions finely chopped
2 green chillies, slit into 4 and cut across
1 tsp ginger paste
1 tsp garlic paste

½ tsp turmeric powder
1 tsp coriander powder
1 tsp chillie powder
½ tsp mango powder or lime juice
1 tsp garam masala
1 tsp cumin seeds
1 tbs kasuri methi
2 tbs butter
½ cup cream
2 tbs coriander leaves cut
Salt to taste

Method:
Clean and soak the 3 dals over night.
Next day add the soaked dals, salt, turmeric powder,
in 3 cups of water and pressure cook for 2 whistles.

Strain the water and keep aside.
The cooked dal should be soft.
Lightly mash the cooked dal and keep aside.

Heat a wok with 1 tbs of butter. Add in the cumin seeds.
When they splutter, add the green chillies, kasuri methi,
ginger garlic paste and sauté for a second.
Now add the chopped onions and sauté till they turn lightly brown.
Add the chopped tomatoes and cook till mushy.

Now add in the chillie powder, coriander powder and garam masala.
Sauté well for a minute.
Now add in the cooked dal, 2 cups of the drained water.
Add more if needed.
Add also the mango powder and the 1 tbs of butter.
Mix well and cook on low fire till the gravy thickens.

Lastly add in the cream and cook for a second.
Remove and garnish with the cut coriander leaves.
Serve hot with rice or roti.

K, the traditional version of dal makhni is very rich coz of the cream... You can find a low fat version of dal makhni on Tarla Dalal which is equally tasty... Here is the link to the recipe for those interested...

Madhu Sree, thanks for your posting.
Do not be scared, the urad dal will not be soggy.
You can see in the picture.
Just remember to wash nicely the dals,
before soaking. So you need not wash again.
The urad dal would have swelled a bit.
If you wash after soaking, the skin will come out.
Try and see very tasty dish.

[tscii]SPRING ROLLS

Ingredients;
1 piece of tofu diced into small pieces.
200 grms jicama (turnip) shredded
200 grms carrot shredded
200 grms cabbage shredded
6 long beans chopped
2 pips garlic chopped
3 shallots chopped
Salt to taste
Little sugar
¼ tsp white pepper powder.
25 pieces of frozen popiah skin
Oil for deep frying.

Sealing paste:
2 tbs corn starch
5 tbs of water.

Method:

Pan fry the diced tofu with little oil, till they are lightly brown. Keep aside.

Heat 2 tsp of oil in a wok, add in the garlic and shallots.
Sauté for a minute.add in the jicama, carrot, cabbage, and long beans.
Season with salt pepper and sugar. Cook for 5 minutes. Remove.

To assemble the spring rolls:
Lay the popiah wrapper on a clean plate.
Put some filling in the middle and add some diced tofu
on top of the filling.
Fold in the two sides and roll up the popiah skin tightly to
form the spring rolls.
Seal the the spring roll with the sealing paste.
Fry them over medium heat until golden brown.
Drain the spring rolls on paper towels and serve with chillie sauce.

Dear friends Navarathiri is just around the corner.
I do not have a kolu, but we observe the nine days with prayers. I normally make different kind of sundal each day.
Those who do not observe this festival, at least have prayers with your children on Saraswathi pooja day.

The Navarathiri i Festival 2010 is celebrated from 8th October to 16th October 2010. Navarathiri , , is a famous Hindu festival celebrated for nine nights and ten days, to worship the nine forms of Goddess Shakti
. Navrathiri festival days are divided into sets of three days to worship three different aspects of Mother Goddess.

The first three days is dedicated to Goddess Durga or Kali Maa in order to destroy all our impurities. The next three days is dedicated to Goddess Lakshmi Devi, the bestower of spiritual wealth. And the final three days Goddess Saraswathi is worshipped – Goddess Saraswathi is the goddess of knowledge, music and art.

i tried eggless cake last week. before 13 years i got this receipe from TV. i made some modifications. it came out nicely.

Eggless cake:
---------------------------

all purpose flour - 400 gms
butter - 125 gms
condensed milk - 1 tin , 395ml
baking powder - 1 tsp
soda bi carbonate - 1 tsp
water - 50 ml
milk - 2 tblsp
sugar - 6 tsp , caramlise
soda - 175 ml

In microwave bowl, add butter and melt it , when it comes to room temperature, add condensed milk to it.

now sieve flour, baking pdr, soda bi carbonate for 3 times.

To the flour mixture add, butter mixture, caramlised sugar and mix. then add soda and milk and gently mix it. if it is too thick add little milk.

this is the basic procedure for eggless soft cake.

variations can be done:
-----------------------------

dry fruit cake:
----------------

mixed dry fruits - 1 cup , chopped nicely
and mix with the batter.


choclate cake:
-----------------

cocoa powder - 3 tsp
instant coffee powder - 1 tsp
pinch of cinnamon powder
blanched cashews - 3 tblsp chopped

mix the above with the batter

walnut cake:
----------------

cocoa powder - 3 tsp
cinnamon powder - a pinch
blanched walnut - 3 tblsp chopped

mix the above with the batter.

now pour the mixture in a greased baking tray, bake the mixture in the preheated oven for 200 C for 20 to 25 minutes.

the cake is very soft and very tasty.

when i went to india, my mom made this thuvaiyal, it was very tasty. it became my favourite too. but we dont get good valaipoo here.

valaipoo thuvaiyal:
-----------------------

valaipoo - 1 hand ful.
ginger - 1/2"
garlic - 3 cloves
dry red chilly - 3
grated coconut - 2 tsp
tamarind - 1/2"
salt - reqd.

fry all the above ingredients one by one in oil and grind it.

this receipe my friend taught me.

chenaikilangu podimas:
-----------------------------

chenaikilangu - 250 gms , clean the skin and grate it

onion - 1 cup finely chopped
garlic - 6 cloves finely chopped
green chillies - 2 finely chopped
red chilly powder - 1 tsp
coriander powder - 1 1/2 tsp
turmeric powder - 1/4 tsp
curry leaves - reqd
salt - reqd
grated coconut - 2tblsp
saunf - 1/2 tsp
oil - 3 tsp

in a pan add oil, add saunf , curry leaves, onions, green chillies, garlic and fry till onion turns pink colour.
Now add chilly, dhania, turmeric, salt and fry for 2 to 3 minutes.
now add chenaikilangu stir for a while, sprinkle little water , cover and cook for 2 minutes. if the vegetable is cooked add grated coconut and garnish with coriander leaves.

this goes well with morekulambu.

Have u ever heard of puLi vadai?....i think this can be stored for about 10 days..:-) hope its not going to cause you trouble searching for the recipe..nga.....:-)

Dear friends, crispy onion rings are a favourite
fast food item. We can do it in our house.
This is a long outstanding recipe.

CRISPY ONION RINGS

Ingredients:
2 large yellow sweet onions
75 grms all purpose flour.
2 tbs corn flour
½ tsp baking powder
A pinch of chillie powder
½ tsp sugar
120 ml milk
Salt to taste
Pepper to taste
Oil for frying.

1 EGG FOR NON_VEGETRIANS

Method:
Cut the onions into circular slices, about 1 cm thick.
Now separate them into rings and put them in a tray.

Now in a bowl, add in the flour, corn flour, chillie powder,
Sugar, salt and pepper powder.
Use a whisk and mix all the ingredient well.

IF USING EGG, WHISK IT WITH THE MILK

Other wise, now add the milk to the dry ingredients.
Whisk it nicely, so that there are no lumps.
The consistency of the batter will be lightly thicker
than our dosai batter.

Heat the oil in a wok.
To check that the oil is hot enough, drop little batter
into the oil. The oil should fry it lightly and take time
to brown it. This way the onion will be cooked through,
and the onion rings will be super crispy

Now gently dip some of the onion into the batter and coat well.
Now you place them into the hot oil using a fork.
Let them cook in small batches, so that they won’t stick together.
When they are fried on one side, turn them on the other side.
It will take about 3 minutes to brown the onion rings.

When they lightly golden, remove and place them on
a tray lined with paper towels to drain.

You can sprinkle little fine salt mixed with pepper
powder before serving.

what a wonderful post. u gave boost to us. with round yam only i made.

sundal tip is good.

even for veges i will grind coconut- 1 tsp with red chilly little jeera without water and mix to veges (lady's finger, keerai, cluster beans, broad beans, chennai kilangu) it will be nice.

Ingredients:
100 grms soft tofu, make a cross on top
100 grms green peas
200 grms carrot cut into cubes
½ inch ginger shredded fine
1 pip garlic smashed
½ tsp oil
5 grms of white pepper powder
5 ml dark soya sauce
200 ml water
Sugar to taste
Salt to taste
Little spring onion for garnishing

Method:
In a heat resistant bowl, put in the cubed carrots,
and the green peas.
Now put the tofu in the bowl.

Heat a pan with the oil, add in the smashed garlic,
and the ginger. Saute until you get a good aroma.
Add in the water, white pepper powder, salt, sugar and the soya sauce.
Let it come to one boil. Now pour this over the tofu.
Steam it in a steamer for about 15 minutes.
Remove and garnish with the spring onions.


NOTE: You can add little cauliflower, capsicum if you like.
or any vege of your choice.

[tscii]This four angled bean can be eaten raw.
The Malays will make fresh red chillie sauce.
Dip the four angled bean in the sauce to eat.
I will post the recipe for the chillie sauce.

I made a simple spicy dish.
This is also a Malay style.



SPICY FOUR ANGLED BEAN

Ingredients:
250 grms four angled beans sliced
3 shallots
2 pips garlic
3 fresh red chillies chopped
Little lime juice
2 tsp oil
Salt to taste.

Method:

Clean and cut the four angled bean.
In a pestle and mortar , add in the shallots,
garlic and the chopped fresh red chillies.
Pound to a coarse paste.

Heat the wok with the oil.
Add in the pounded paste.
Sauté till there is no more raw smell.
Add in the four angled beans, salt and stir fry.
Sprinkle little water and cook for a minute.
Add in the lime juice and remove.
Serve hot.

FRESH RED CHILLIE SAUCE

Ingredients:

8 fresh red chillies
1 slice of ginger
4 pips garlic
1 tbs lime juice
1/4 cup vinegar
1 tsp sesame oil
3 tbs warm water
sugar to taste
salt to taste

Method:

Blend all the ingredients till smooth.
Your fresh chillie sauce is ready.

NON VEGETARIANS CAN ADD 3 TBS OF CHICKEN BROTH
INSTEAD OF THE WARM WATER.

Dear friends,sundals can be made from motchai, green gram dal, channa dal, peanut, cow gram, dried green peas, white chick peas, black chick peas, and even corn.

there is a basic method to do the sundal.
Other than that, there are spicy recipes with additionl ingredients.

First I will give the simple method:

Basic Recipe:

1 cup of white chick peas, soak for 8 hours.
1 sprig curry leaves
2 long dry red chillies cut into small pieces.
1 tbs of coconut scrappings
little lime juice or little grated mango (optional)

1 tsp oil
1/2 tsp mustard seeds
1 tsp urad dal
little asafoetida
salt to taste.

Method:

Pressure cook the chick peas with little salt. drain the water.
Heat the oil in a wok, add in the mustard seeds, when it splutters, add in the urad dal, curry leaves and the asafoetida powder., stir fry for a second. add in the boiled chick peas and the coconut scrappings. Stir once more and remove. you can add the grated mango or the lime juice, mix and serve.


Note: If making green gram dal, you need to soak only 2 hours, then boil it in a pot, not pressure cooker.

If doing with channa dal or moong dal, you need not soak it. wash and boil and see that they are not over cooked.

I will post later, the recipes for spicy sundals.

I usually make sweet puttu, stuffed sweet puttu, aval puttu.
sweet vadai, pongal. I do not make boli and things.

SPICY BLACK CHICKPEAS SUNDAL

Ingredients:

1 cup of black chickpeas soaked for about 8 hours.

¼ tsp mustard seeds
Little coriander leaves for garnishing
Salt to taste

To Grind Into A Coarse Paste:

Method:
Pressure cook the black chickpeas. Strain the water.
In a wok, add in the oil. Add also the urad dal and mustard seeds.
Add also the cut red chillie. Sauté for a second.
Add in the boiled black chickpeas, stir fry for 4 minutes.

Now add in the salt, and the ground paste.
Stir fry for a second, add in the curry leaves .
Add in the lime juice, remove and garnish with the cut coriander.

[tscii]Here is the recipe for stuffed sweet putu.

STUFFED SWEET PUTU

Ingredients:

2 cups of steamed rice flour.
½ cup grated jaggery (vellam)
1 cup coconut scrapings
A pinch of salt
Little ghee

Method:
Put the puttu flour in a basin.
Add in the salt.
Sprinkle little warm water and mix it with your fingers.
The flour should not be too dry or too wet.
Use a coarse sieve to sieve the flour.
Add in ½ the coconut and mix the flour well.
The flour should be loose like rava.


Grease the idli plates with little ghee.
Put in little flour in the mould of the idli plate.
Add 1 tsp of the grated jaggery in the middle of the flour.
Now add more flour to cover the jaggery thinly.
Press it lightly and steam the puttu for about 7 minutes.
Remove the puttu slowly, it will retain its shape.
Now heap a little coconut on top and serve it hot.

SPICY GREEN GRAM DAL SUNDAL 2

Ingredients:

2 cups green gram dal soaked for 2 hours.
3 shallots sliced
2 tsp coriander seeds
½ tsp cumin seeds
3 dried red chillies
1 tbs scrapped coconut
2 tsp oil
Salt to taste.

Method:

Boil the green gram dal and salt in a pot of water.
Do not over boil and make the gram dal mushy.
Drain the water and keep aside.
(you can use the water to make rasam)

Now grind the coriander seeds, cumin and the red chillies to a paste.
Heat a wok with the oil, add in the shallots and sauté till brown colour.
Add in the ground paste, and the boiled gram dal.
You can sprinkle little water if the paste is thick.
Simmer till the raw smell goes.
Now add in the coconut scrapings and remove.

Hi Friends,
Here is the recipe of Muttai kulambu I used to do which i learnt from my mother. Sorry I couldnt post the picture. Pls try this and give me ur comments. If possible post the picture also.I will be very happy!!

Muttai Kulambu:
Ing:
Egg - 4,
Tomatoes - 2,
Shallots - 10,
Oil - 2 tbsp,
Salt - as reqd.,
Coriander leaves (chopped) - little,
Curry leaves - 1 arc.

To Grind:
Shredded Coconut - 3 tbsp,
Dried red chillie - 4( or more as per your taste),
Ginger+Garlic paste - 1 tsp,
Cinnamon - small piece(1"),
Cloves -2 ,
Perunjeeragam - 1/2 tsp,
Turmeric pwdr -1/4 tsp.

Method:
Boil the eggs and remove the shell.
Keep it aside.Cut the Onion and Tomato.
Grind the items given in 'To Grind' to a fine paste.

Heat kadai and pour 2 tbsp of oil.
Put the onion and fry well till onion gets translucent.
Now add tomato and fry till oil floats on top.
Then add ground paste and salt required.
Saute till raw smell goes off and add 1/2 to 1 cup of water.
Let it boil and add the eggs one by one to it.
Remove from stove.
Garnish with curry leaves and coriander leaves.

Note:
Instead of making it like Gravy u can make thokku by reducing the water and also boiled egg can be replaced by breaking the eggs into gravy and let it cook in gravy itself.

SWEET PUTU

Ingredients:

2 cups steamed flour
1 cup of grated coconut
½ cup sugar
½ tsp cardamom powder
1 tsp of ghee
A pinch of salt.

Roasted cashew nuts and raisins are optional

Method:
Put the flour in a big basin.
Add salt and sprinkle little warm water.
Sprinkle the warm water, little by little.
Mix it like fine breadcrumbs, using your fingers.

Now add the cardamom powder, and the grated coconut.
Mix again nicely. Steam the flour using a steamer, or a putu pot.
Steam the flour for about 20 minutes.
Remove and immediately add in the ghee and sugar.
Also add the nuts and raisins if using.
Mix nicely again. The sugar will melt in the heat.


Note: If you mix the sugar in the flour before steaming,
the flour will not be cooked well.

Those who like a light brown colour,
Make a one string syrup with ½ cup of jiggery.
Mix it in the steamed putu.

This vadai is little like the vadai we do for Ajaneyar. Of course the taste is very different. This is a crispy vadai.

In oil add kadugu...kadalai parupu....uluntham paruppu....karuvepilai...kothamalli thazhai pottu nalla vathakanum....vathangiyapin araithu vaithu irukum arisi maavai athil kotti...kozhukattaiku ketiyaaga vathakuvathu pola vathaka vendum. U take it down from the heat & then siru vadaigalaaga ilaiyil or polythene bag la thatti...yennaiyil porithu edukanum....this will stay for 10 days & sooda saapitaa miga rusiyaaga irukum ...

apadinu pottu iruku....naan senjathilai.....venumnaa konjamaa try panni paaruma kugan ....but this seems like a lot of work...paarthu seiyavum...sareeyaa...oreyyyy puliyaaga iruka poguthu...hahahaha thyirley oori puli vera serthu...but i think the red chillies...karuvepilai & kothamalli & all the thaalippu will make it taste good..

No Lakme, you need not peel the skin.
It tastes good with the skin.
There are certain recipes, where you have to peel the skin.
See that it is not cooked very mushy.

[tscii]O.K bkarthika, here is your kuska biriyani.



KUSKA BIRIYANI

Ingredients:

2 cups basmati rice, soak for 20 minutes, drain
3 green chillies sliced
2 onions sliced
1 tsp ginger paste
1 tsp garlic paste
1 ½ cups coconut milk
1 ½ cups water
2 tbs mint leaves
2 tbs coriander leaves chopped
4 tbs of ghee
Salt to taste

For Tempering:
1 inch cinnamon stick
3 cloves
3 cardamom
1 bay leaf
1 tsp cumin seeds.

Method:
Heat the ghee in a rice cooker, add in all the tempering ingredients.
Let them splutter, add in the sliced onions and fry it till it is light brown.
Add in the sliced green chillies, and fry it well.
Next add the ginger and garlic pastes, sauté them well.
Lastly add in the coriander leaves, curry leaves and the mint leaves.
Fry for a second, add in the coconut milk , water and salt.
Let it come to a boil, add in the drained rice.
Give it a good stir, now cover and cook till the red button stops
You have gama gama biryani.
Serve with onion raitha, or any kurma.


Note; you can pressure cook it for 3 whistles.
If cooking in a pot, let it come to boil, sim the fire.
Cover the pot with a heavy cover and cook.

Instead of the coconut milk you can use 3 cups of water.
Health wise you can even use low fat milk.

Last time i had a very different Anjineyar vadai at Sucheendram Temple....we had saathified vada malai...both the shape & taste was veryyyyy unique...:-) Avarai paartha paravasthiley recipe ketka maranthiten ... :noteeth:

You have to pat the dough thin, like tattai.
The vadai is crispy. It has to be crispy for longer keeping.
Ah, Sucheendram Temple, old memories are kindled.
This vadai is something like that only.
Ingredients and taste differs.
I will look into my old file for the recipe.

[tscii]Making this sharbeth brings back old sweet memories.
My granny had a fan made of this root.
She would sprinkle little water and fan herself.
The air will have a sweet smell of the root.
She also had a very big earthen pot for drinking water.
(No filters that time) :lol:
She will crush a little root and put it in the pot. The drinking water will have the flavor of the root.
The roots have cooling effects.


NANARI ROOT SHARBETH

Ingredients:

100 grms of the nanari root ( veti ver )
½ litre of water
1 litre of warm water
2 kg sugar
2 tbs jaggery ( optional

Method:
Wash and clean the roots well.
Slightly crush the roots with a heavy object.
In a pot add the crushed roots and the warm water.
Keep over night. The water would have changed colour little.

The next day, add the ½ litre of water to the soaked roots.
Now you will have 1 ½ litres of water with the roots.
Now boil the water with the roots for about ½ an hour on sim.
Remove and keep aside.


Now in a different pot, add the sugar.
Add little water and keep on stirring.
The sugar syrup should have the consistency of honey.
Now strain the water boiled with the roots and add it to the syrup.
Give a good stir, keep aside to cool.

You can boil the jaiggery and add to the syrup,
Jaggery is added to get the hue to the syrup.

To prepare one glass of juice:
Put 1 tbs of syrup in a glass.
Add 1 tsp of lime juice.
Pour iced cold water.
Stir the contents and serve chilled.

Hi Kugan,

Thanks for the Kuska. But what i had in restaurant was brown in colour. I dont know what ing they used!!! Thanks a lot for the Recipe...Nannari Sarbath looks tempting....

Here I am sharing with u the recipe of Tomato Onion Chutney which is the first item i learnt in cooking...When i make this chutney....my son loves it and he will have one more dosai or idli whatever..... Same I dont have Camera...So no picture....Try this and upload the Picture if possible...Thanks!!!

Tomato Onion Chutney
Ing:
Big Onion(sliced) - 1
Ripe tomato(cut into pieces) - 1
Red Chillie - 2(according to your taste)
Garlic flakes - 3 to 4
Coconut scrapings - 1 tbsp
Tamarind - small pea sized
Salt -required
Oil - required to shallow fry

To Temper:
Oil - 1 tsp
Urad dal - 1/2 tsp
Bengal gram - 1/2 tsp
Curry leaves - 1 arc

Method:
Heat a kadai with 1 tbsp of oil.
Fry Onion till it becomes translucent.
Then add red chillie and garlic fry for 1-2 minutes.
Then add tomato and fry till it becomes mushy.
Put off the fire and let it cool.
Grind it with coconut and tamarind with salt in a blender.
Temper the chutney with items given in 'To Temper'
Serve with Dosa or Idli.

NOV anneh. Thanumalayan temple is in the same place.
Listen to the music creating pillars. Put your ears on the pillar and you can hear the music.

The Lord Hanuman , made from single stone is about 22 feet.
This was the tallest last time.

Now in Tindivanam, near Pondicherry, they have tallest, single granite stone Hanuman which is 36 feet.

Do not miss the sun rise and sun set in Kanya Kumari.
Also vist the Vivekananda Rock.
They have a meditation hall, Vivekanda Mandapam known as Dhyana Mandapam. Visitors can sit and relax and meditae over here. The atmosphere here is very calm and seren.
I love to meditate there.


If you have the time also visit Sri Puram Golden Temple,
Which is in Tirumalaikodi in Vellor.
Its about 150km west of Chennai.
The Sripuram is the biggest structure made out of gold. Even the Satari, a crown with feet of the lord engraved on it, is made of solid gold weighing 1 kg.

Dear Karthika, this tomato onion chutney is a regular in my house. I do not add garlic and coconut. For tempering it is only mustard seeds, urad dal, cut red chillies, and curry leaves. The others are the same. I tried your measurements. It was very tasty.

Dear friends, yesterday was channa dal sundal.
You just have to wash the dal, add salt and boil, till it is cooked. Not mushy, then temper like you do for basic sundal.

You can add in diced mango pieces instead of nata de coco

SIMPLE MANGO PUDDING

Ingredients:
3 ripe mangoes
½ cup sugar
½ cup evaporated milk
2 ¼ cups water
1 tbs agar agar powder
2 tbs of nata de coco

Method:
Peel and chop the mangoes coarsely.
Combine the mango with ¼ cup of water.
Process until smooth.
Press the puree through fine sieve, over a bowl.
Discard the solids.

Bring 1 cup of water to boil, add the sugar, stir until dissolved.
Remove and keep aside to cool.
Bring another cup of water to boil, add in the agar, agar powder.
Stir until dissolved, let it come to one boil, remove and cool a bit.

Now add the mango puree, sugar syrup, agar agar solution,
and also the ½ cup of evaporated milk.
Use a whisk to stir the contents well.
Add in the nata de coco, mix nicely.
Pour the mixture into small cups.
Cover and chill for 3 hours or over night.

Suvai, here is the recipe for the Anjineyar vadai.


ANJINEYAR VADA MAALAI

Ingredients:

1 cup of whole black urad dal, soaked for 20 minutes.
1 tsp cumin seeds
1 tsp black pepper corns
Salt to taste
1 tbs rice flour

Method:
Drain the black urad dal, add in the cumin seeds,
black pepper corns, and salt to the soaked dal.
Leave this mixture for about 15 minutes.

Now grind the urad dal mixture without adding water.
The paste will be a little coarse. Add in the rice flour.
Mix nicely.

Now heat the oil in a wok.
Take a plastic sheet and oil it a little.
Now take a small ball of the batter.
Now flatten the batter, slowly with your fingers.
The vadai should be quite thin. Make a hole in the middle.

Keep the flame very low, slip the vadais into the oil.
Keep flipping the vadais till it gets a brown colour.
It takes time to cook, since the flame is low.
Only then you will get crispy vadais.

Remove and put it on a paper towel.
Take a string and make the vadais into a maalai.

Dear friends, yesterday was the 6th night of Navarathiri.
I made corn sundal. Remove the kernels from a matured corn.
Use little salt and boil them.
Or you can boil the whole corn, then remove the kernels.
I like to do the basic sundal method for this corn sundal.
Try it out. Tomorrow is green peas sundal.

Venneer (aka) Hot water

Take 2 cups of water and boil thorughly.
This kills germs and the water becomes safe

[tscii]This lotus root is mainly used in Chinese cooking.
It tastes good too as our curry. Kugan98


LOTUS ROOT CURRY

Ingredients:
300 grms lotus root , peeled, and cut into thin rounds.
2 small potatoes peeled and cut into cubes.
100 ml coconut milk
100 ml water.
2 medium onions chopped finely
2 big tomatoes chopped fine
1 green chillie chopped
3 pips of garlic finely chopped
½ inch ginger finely chopped

2 tsp red chillie powder
1 ½ tsp coriander powder
¼ tsp turmeric powder
1 tsp garam masala powder

½ tsp fenugreek seeds
1 sprig curry leaves
1 tbs oil

Little coriander leaves chopped

Method:
Slice the lotus roots and put them in a bowl of water with little vinegar, to stop discolouration.
Heat a pot with the oil. Add in the mustard seeds.
Add in the onions and sauté till translucent.
Add in the ginger and garlic, sauté again well.
Now add in the red chillie powder, coriander powder, and turmeric.
Stir nicely, add in the chopped tomatoes and cook till they turn mushy.

Now add in the green chillies and curry leaves.
Mix well add in the cubed potatoes, mix well again.
Add in the 1 cup of water, and stir until combined.
Add in the lotus roots, salt, and simmer on low heat for 15 minutes.
Add more water if needed. Once the potatoes are cooked and the gravy
thick, add in the coconut milk and stir well. Add the garam masala powder.
Let it come to one slow boil and remove.
Garnish with the cut coriander leaves.
Serve with rice.

NOTE: The lotus root will be little crunchy even after cooking.

I did the green peas, or pattani sundal on thursday.
On friday I did the sundal with horsegram or kollu.
I tried the method given by Ksen long agao in the SOS thread.

The Recipe By Ksen.

Soak channa overnight and pressure cook with salt. Grind a small piece ginger and two/three green chillies coarsely. Heat oil in a pan, add mustard, perungayam, curry leaves, then the cooked channa (without water). Mix, add the ground paste, mix well and serve. If you want, add some lemon juice, after removing from fire. Dried peas, channa dhal, green gram - all taste good this way.

FRIED LOTUS SEEDS

Ingredients:

2 fully grown lotus seed heads.
Little fine salt
Little pepper
Oil for frying

Method:

Take the lotus seed heads.
Break to reveal yellowish green lotus seeds inside.
Remove the outer green rubbery skin of each lotus seeds.
You will find white lotus seeds.
Repeat the same with the remaining green lotus seeds.

Heat oil in a wok, add in the white seeds and fry till crisp.
Remove and sprinkle with salt and pepper.
Bottle when cool.
It is a good snack.

Roshan, nata de coco is a jelly like thing made from coconut water/coconut(not sure which one)... I've seen it in SG,MY but not in India... It usually comes in bottles, canned and even in huge tubs... It's very tasty to eat the sweetened ones as such...

You can even do the pudding without the nata de coco.
You can use mango cubes instead.
Those who are not vegetarians can use 3 tsp of gelatine in stead of agar agar powder.

But I have never tried thinking it is somethign non veg :oops: ( I am a non-veg but it's quite risky having non-veg food in Bangkok and I mostly remain vegetarian when I am there.)

Thanks uncle - now I remember something else. In bangkok once I thought of having tender coconut water and bought one from the street vendor and took it to the hotel to find some kinda jelly inside the shell. I tried a small piece and it was sweet but I did not like the taste. I think it is made out of both tender coconut and coconut water. That's how it looked like and tasted like.


If you want a guinea pig I will be happy to be one ! :lol:

O.K now coming to the sweet items,
I made sweet aval putu, rava sweet putu, rice sweet putu.
sweet aapam, aval payasam, rava payasam, rava sweet pongal. kalkandu pongal, sakarai pongal.

On the 10th day, I made paal poli.

I have posted recipes for all the nine days sweet items in different threads. I will post the recipe for paal poli.

[tscii]PAAL POLI

Ingredients:

1 cup all purpose flour
¼ cup of sooji
1 tsp ghee
Pinch of salt
Enough water

1 litre of milk
1/2 cup of sugar more if you like
1 tsp cardamom powder
1 tbs ground cashew paste
1 tbs ground almond paste

2 tbs of chopped roasted cashew nuts
Little saffron

Method:
Combine the flour sooji, salt and ghee.
Add water little by little and knead into a dough.
Like our chapathi dough.
Put it into a airtight container and keep aside for ½ an hour.

Now add the milk, sugar, cashew paste, saffron and almond paste.
Put it into a heavy based pot and boil the milk on low heat.
Simmer the milk until the milk is reduced a bit.

Roll out the dough into small puris.
Deep fry the puris, drain the oil well .
Now soak the puris in the milk.
Remove the soaked puris to a serving tray, pour little milk on top.
Garnish with the roasted nuts and serve.
Serve hot or chilled

Ok K... medhuva recipe post pannunga... I'm not sure abt the consistency of the kuzhambu...My friend used to pour it over dosai and take for her lunch... so it'll be fully absorbed and so taste n smell mattum thaan enakku theriyum...

Dear Dev, the poli will be like our puris only.
It will puff up when you fry. It will not be very crisp.

You soak the fried polis in the milk for about 5 minutes only.
Then you remove them to a plate if you are not serving at once. You see the polis will become soggy.

While serving place two polis in a plate, pour the thick milk over and garnish with the nuts.

The paal poli tastes best if the milk is reduced to half while boiling. Thanks and take care, Kugan98

Thats fast to try out so soon. Anyway it is a very simple sweet. Yes you can do puris with the same measurement of flour. They will turn out well. Happy trying. Take care, Kugan98

Dear Aarthii, I felt very sad that your inji tayir was very spicy.
I do not know where you went wrong, maybe too much of ginger. Normally we use very young ginger for this recipe.
i always do this for every Ammavasai

INGII THAYIR ( KERALA DISH )
Ingredients:
1/4 cup of freshly grated young ginger ( Less if you like)
4 green chillies
salt to taste
1 cup plain thick yogurt
1 tbs coconut oil
tsp mustard seeds
1 dried chillie cut into pieces
2 sprig curry leaves

Method:
Grind the ginger, green chillies and salt with 3 tbs
Of water, to a thick smooth puree.
Combine the smooth puree with the yogurt and stir well.
Heat oil in a pan, add the mustard seeds, when they sputter
Add the dried red chillie and curry leaves.
Remove from stove. Pour over the chutney and stir well

EGG ACHAR

Ingredients:
5 hard boiled eggs
1 cucumber seeded and cut into strips
1 carrot cut into strips
1 big onion cut into rounds
2 long beans cut into 1 inches in length
2 red and green chillies slit
1 tbs chillie paste
1 tsp sesame seeds
3 tbs of vinegar
3 tbs of sugar
Salt to taste
Oil

To grind:
5 medium sized onions
5 pips garlic
1.5 cm ginger

Method:
Remove the shell from the hard boiled eggs.
Now fry the whole eggs in oil and remove. Keep aside.
Heat about 2tbs of oil, saut the ground ingredients
Till there is a good aroma.
Now add in the chillie paste and fry till oil rises from the spices.
Add in the cucumber, carrot, slit chillies and long beans, stir for a minute.
Add in the vinegar, sugar and salt. Add little water if needed.
Add in the fried eggs, stir for a minute add in the cut onions and
Sesame seeds. Mix well and remove.

Note: This dish is good for functions.

I think that was purely based on the ginger type which i used.

CORIANDER CHICKEN

Ingredients:
500 grms of chicken breast cut into pieces
6 green chillies
2 birds eye chillie
2 big onions chopped
1/4 cup coriander leaves
1 tsp ginger paste
1 tsp garlic paste
1 tsp coriander powder
tsp cumin seed powder
tsp garam masala powder
1 tsp cumin seeds
A pinch of tumeric powder
Salt to taste
2 tbs of oil

Method:
Grind the onions, coriander leaves, green chillies, bird eye chillies
Ginger and garlic paste into a smooth paste.
Apply the paste to the chicken and leave aside for 30 – 40 minutes.

Heat oil in a wok, add the cumin seeds, now add the chicken and tumeric powder. Stir fry nicely add little water and stir the chicken well for about 5 minutes.
Add salt coriander powder, cumin powder and garam masala powder. Stir well again and cook on low heat.
Cook till chicken becomes tender.
Remove and serve.

[tscii]Suvai, uppadam means something preserved. Its something like our vatral kulambu. My aunt says normally it is prepared with manathakkali vatral. i did not have it, so I used sundakkai vatral :oops: Try , yummy with steaming rice. Kugan98


UPPADAM

Ingredients:

5 okra cut into 1 inch pieces
1 green chillie, slit into 4 and cut across
2 tsp tamarind paste
5 dry red chillies
2 tbs raw rice
1 tsp fenugreek seeds
½ tsp mustard seeds
2 tsp manathakkali vatral
A pinch of asafoetida powder
2 tsp oil
Salt to taste

Method:
Dry roast, the rice, red chillies, ½ tsp of fenugreek seeds.
Cool and grind to a fine powder.
Add 1 cup of water, mix well and keep aside.

Heat the oil in a wok, add in the mustard seeds and 1/2 tsp fenugreek seeds.
Add in the cut green chillies, cut okra asafoetida and the vatral.
Sauté well, add in the tamarind paste and 1 cup of water.
Add also the salt, mix well and boil well for about 5 minutes.

Now add the mixed paste to the wok.
Stir nicely and boil for about 10 minutes on low flame
till the gravy thickens and oil seperates. Remove and serve
with rice.

Aarthii, if u find the taste and smell of ginger to be too strong, you can saute the ginger pieces in a few drops of oil for few mins... that should redduce the sharpness of the ginger... Try n let us know if it works...:D

aahaa... thanks a lot K... coriander chicken sooperaa and very simpleaa iruku... does it go well with chapathi or rice?... I'll make it when I visit my SIL's place and give u the feedback...

egg recipe I can prepare at home...so seekirame adhu feedback solren... Also indha egg achar endha dishes kuda nalla irukkum... I'm sure it'll be a great side for plain biriyani and maybe nasi lemak...

Thanks Dev for the tips in frying the ginger.
You can take the coriander chicken with rice or chapathi.
Dev, try to grill the chicken a bit after cooking.
the taste will be very nice.

When ever I had functions in the house before, I used to do the egg achar. Sure hit with the guests.

I will post the chicken rendang for you.
