[tscii]Hey guys im back with two other recipes. Interesting ones .


1.Vazhakai and pattani Cutlet

Ingredients.
Vazhakai – 2
Green peas -1/2 cup
Coconut scrapings- less than ¼ cup
Green Chillies paste – 2 tbsp ( made out of 4 green chillies)
Kothamali
Lime juice
Raisins – 6
Cashews -4
Ghee
Arrow root ( I got this from the Chinese grocery store. It is called the Chinese potato or tse goo)
High medicinal value.Kedaikalana you can skip this ingedrient, but I would highly recommend adding this
Salt to taste
Sugar to taste


Method.
1.Boil the vazhakai and peas in the pressure cooker . Peel the vazhakai once it is boiled and then mash both of them.
2. Add salt and chopped arrow root to the mixture and make a smooth dough.
3.To this dough add coconut scrapping, kothamali, chilli paste, lime juice, little bit of sugar
4.Roast cashews and raisins in ghee and add to the above.
5. Make the dough into small balls and flatten them as we do for vadai.
6.Deep fry in the oil.

PS: You can also use potatoes instead of pattani.I personally prefer the one with peas.

Serve the cutlet with tomato cutney or pudhina chutney. Alternatively the above cutlet could be used to make another recipe called “Vazhakai cutlet in coconut sauce”

2.Vazhaikai cutlet in coconut sauce.

Ingredients
Vazhaikai and pattani cutlet – 10
Green chillies – 4
Coconut milk – 2 cups.
Salt and sugar to taste
Cumin Powder to garnish

Method
1.Bring the coconut milk to a nice boil. Keep stiring until it becomes thick and creamy.It would take around 10 minutes to get a creamy coconut sauce.
2.Add salt, sugar and chopped green chillies.Mix well
3. At this point slip in the cutlet and cook for 10 more minutes
4. Transfer the cutlets in coconut sauce to a bowl and sprinkle cumin powder before serving.

Kugan, u r right... my tweaked payasam will not taste exactly like the one cooked the traditional way but I don't have the patience to cook it the traditional way... & I also don't like it to be too heavy... so I always add low fat milk... & yes, I don't add any extras to the payasam other than milk & sugar...:)& here in India, I see cooks using condensed milk for rice payasam as well as ada pradhaman to cut short the cooking time & that version tastes good too... BTW, u can also try adding caramel to this rice payasam... it'll taste totally diff...

I also make a low fat version of the traditional broken wheat payasam using milk & just a lil bit of coconut paste & I like it much more than the wheat payasam tht's cooked full & full in coconut milk... :)

[tscii] Another simple dish for daily cooking.

RED KIDNEY BEANS MASALA ( Rajma)

Ingredients:

300 grms beans soaked over night
3 potatoes boiled
2 big tomatoes chopped fine
2 big onions made into paste
1/2 tsp garlic paste
1/2 tsp ginger paste
2 tsp chillie powder
1 tsp coriander powder
¼ tsp aniseed powder
½ tsp cumin seed powder
¼ tsp garam masala powder
Little tumeric powder
2 tsp oil
Salt to taste
Little cut coriander leaves

Method:
Soak the kidney beans over night and boil till tender.
Cut the boiled potatoes into cubes

Make a paste with the onion, ginger garlic and all the spice powders.
Heat oil in a wok, sauté the paste till oil separates.
Add in the chopped tomato and cook till they turn mushy.
Add in the cooked kidney beans, salt and the cut potatoes.
Stir nicely , now add a cup of water and bring to a boil.
Then simmer again till you get a good consistency.
Add finely chopped coriander leaves.
Remove and serve with bread or as side dish.

Dear Suvai, today I did Nithi's Bassaru.
It was very tasty. All enjoyed it as more of
a keerai soup.
The greens I made it into a kadayal.

[tscii]This is a simple poriyal which we do daily in our homes.
Poriyal can be made with many types of vegetables.


CABBAGE PORIYAL

Ingredients:

300 grms cabbage cut finely
1 onion sliced
1 dry red chillie cut into pieces
1 sprig curry leaves
¼ tsp tumeric powder
¼ tsp asafoetida powder
¼ tsp mustard seeds
1 tsp urad dal
2 tsp oil
2 tbs thick coconut milk or coconut scrapings
Little coriander leaves.

Method:

Heat oil in a wok, add the mustard seeds, when it crackles
Add the urad dal and fry till golden.
Add in the cut onions, curry leaves and the dry red chillies.
Sauté well, add in the tumeric powder, and asafoetida powder.
Add also the cut cabbage and salt. Fry nicely for about 2 minutes.
Cover the wok and cook for another 3 minutes.
Remove the cover, the cabbage would have cooked in the steam.
Stir nicely, add in the coconut milk or the scrapings.
Give it another stir and remove, garnish with cut coriander leaves.
Serve it as a side dish for rice.

KOLLA URUNDAI KULAMBU

Ingredients:
500 grms minced mutton
1 egg (optional)
Salt

To grind for meat balls:
1 onion chopped
10 green chillies chopped
2 tsp ginger paste
2 tsp garlic paste
1 tbs kas-kas
½ tsp aniseeds
3 tbs roasted channa dal
150 grms coconut scrappings
1 inch cinnamon stick

To Grind for Gravy:
1 tbs coriander seeds
8 red chillies
½ tsp cumin seeds
1 tsp aniseed
2 tsp garlic paste
2 tsp ginger paste
1 onion chopped
½ tsp tumeric powder
1 tbs coconut scrapings

To Season:
3 tomatoes chopped
1 sprig curry leaves
1 inch cinnamon stick
2 cloves
1 tbs ghee or oil

Method:
Grind all ingredients under “grind for meat balls” finely .
Add to the minced mutton, add salt and egg.
Mix nicely. Add little besan flour if you find the mixture a bit loose.
Shape them into small balls.
At this stage you can deep fry them, or leave it as it is.

Grind all the ingredients under “Grind for gravy” finely.
Heat a wok and add the ghee or oil. Add in the spices.
Now add in the curry leaves and tomatoes.
Sauté nicely till the tomatoes turn mushy.
Now add in the ground paste for gravy. Sauté nicely.
Add in enough water to make a gravy. Add salt.
Boil the gravy for few minutes. lower the heat to medium.
Now lower the meat balls slowly so that they do not break’
(That is if you have not deep fried them)

Let the meat balls simmer in the gravy until they are cooked.
See that the gravy is not too thick.
Remove and garnish with coriander leaves.
Squeeze a lime before serving.

kugan & Selviem,

I have made the kola urundai curry. it was excellent. made my own modification.. i mixed ur recipe with selviem's so its kusel kola urundai curry!!! I have uploaded the pictures...

thanks superspicy for the combination of both of our receipes.
i made ur cake for my son's bday, he liked and he was so happy that i made at home. All the kids enjoyed the cake. thanks a lot for giving us a wonderful cake. next application from my son is that cup cake.

Hi Kugan nga!!

Thank u for posting the pic of bassaru...looks very tempting...will try it out along with the cabbage poriyal with thengai paal...thats new to me. Thengai pottu poriyal panni iruken saapitum iruken but not with thengai paal....will let u know.

Madhu, on saturdays, we do not add garlic and onions

[tscii]This is a simple tofu achar recipe.

TOFU ACHAR

Ingredients:

3 pieces of firm tofu cut into cubes ( can subtitue with panner)
1 carrot cut into fingers
I cucumber, remove the seeds and cut into fingers
3 fresh red chillies, remove seeds and cut into fingers
1 big onion sliced a bit thick
5 shallots make into paste
1 tsp of garlic paste
1 tsp of ginger paste
1 tbs dry chillie paste
1 tbs tomato sauce
1 tbs vinegar more or less to taste
1 tbs sugar more or less to taste
2 tsp roasted sesame seeds
1 tbs oil
Salt to taste

Method:
Cut the tofu into cubes and fry in oil.
Heat a wok, add the oil, add in the all the pastes and sauté.
Sauté till a nice aroma comes.
Now add in the sliced onions, stir for a minute.
Now add in the vinegar, sugar,tomato sauce and salt.
Give a good stir.
Now add in the cucumber, carrot, sliced chillies and fried tofu.
Mix everything well, give a good stir.
See that the paste sticks on all the veges.
Taste for salt sugar and vinegar.
You can add now if anything is less.
Remove and sprinkle the roasted sesame seeds on top.
This dish goes well with ghee rice or pulavs

[tscii] I laughed loudly when my aunty suggested
that she wants to make potato raitha.
She proved me wrong. Here is the recipe.

POTATO RAITHA

Ingredients:

2 Big potatoes boiled
2 green chillies chopped fine
1 onion chopped fine
¼ tsp ginger chopped fine
1 cup fresh curds more or less
Little asafoetida powder
Little coriander leaves chopped
½ tsp mustard seeds
1 tsp urad dal
1 tsp oil
I sprig curry leaves
Salt to taste

Method:

Boil the potatoes , skin and mash well.
Add in the asafoetida powder, finely chopped ginger
Green chillies, onions, salt and coriander leaves.
Mix well and add in the curds.
Now heat a pan with the oil. Add in the mustard seeds.
When they splutter add in the urad dal and curry leaves.
Pour it on the raitha when the urad dal turns golden.
Serve it as a side dish. You can chill it if you like.

Ghee Chicken (NEI)

(Kugan i know you are veg, so u can try this dish with ur veg chicken or mutton)

Ingredients:

1/2 kg chicken - cut into small
1 Large onion- sliced very small
1 Tomato - Sliced very small
Yogurt - 2tbsp
Ginger & Garlic Paste - 2 tsp
Chilli Powder - 2 tsp
Corriander Powder - 2 tsp
Tumeric Powder - 1/2 tsp
Corriander leaves
Cloves
Cinnamon Stick
Cardamon
Curry Leaves
1/4 cup water
salt
1tbsp Ghee

To Grind
3 tbsp of Coconut Shreds
5-6 Cashew Nuts
1/2 tsp Cumin Seeds
1tsp Poppyseeds ( Kasa Kasa)

In a hot pan of hot oil, add in spices, curry leaves, onions, tomatoes and saute it till light brown. add in the ginger & garlic paste . Add in the chicken, tumeric, chilli, coriander and mix it will for 5mins. Add in the yogurt and the grind paste and mix it well with water and let the chicken cook for good 15mins.Add in salt, When masala is thick and nice. add in 1tbsp Ghee and corriander leaves and mix it well n remove from heat.

As i am not very fond of vinegar....is there another subsitute?

i am planning to write a starter dish named kunukku. yesterday i made it for the party, it came out very well. But i am waiting for the pictures, my husband took snap of that, he is so busy not finding time to download the picture.
Also i made carrot halwa, which came out very well. veg pulav, idiyappam, mutton kuruma, veg stew, corn crunchy salad, potato thokku, keerai kulambu and white rice.
Everybody enjoyed.

Kugan, how can u laugh at potato Raitha!!!... it's one of my fav... if u r making to with rotis, try adding a lil chaat masala & it tastes yum & smells so good...:)

I read in a couple of books that 1 tablespoon of vinegar along with 1 teaspoon of baking soda can be substituted for 1 egg. Both white distilled vinegar and apple cider vinegar can be used. This combination works best in cakes, cupcakes and quick breads. I also read in few forums that 2 tablespoons of lemon juice can be used in place of the 1 tablespoon vinegar. So for this event you could use either, but I have to mention here that I have not tried the lemon juice substitution.

Also I see a lot of baking recipes with vinegar, especially in various vegan books, websites and forums. You can try those recipes also. That is, you could either take a recipe which has eggs and substitute it with vinegar or try recipes which already has vinegar in it and is eggless too.It helps the cake to rise well... White vinegar is the best. Even buttermilk can be used. So if u dont like vinegar use buttermilk.

SuperSpiczy.....thanks for the substitutes for eggs as well as vinegar.....buttermilk i have heard of being used but not lemon juice.....some use vegetable oil also.....will surely try it out...:-)

She is very fond of bittergourd.
Too many dishes with it.
I am getting worried as she will return to India soon.
Try to get as many recipes as I can.

Nithi, here is the corn crunchy salad

Sweet corn - 1 cup
baby corn - 10 pieces, blanch or steam and cut in 1 cm length
cucumber - 2 medium size, cubed
tomato - 1 medium size, remove seeds, cubed
green capsicum - 1/2, remove seeds , cubed
red capsicum - 1/2, remove seeds, cubed
orange capsicum - 1/2, removed seeds , cubed
white channa - 1/2 cup (soak overnight, cook for a whistle)
Red kidney beans - 1/2 cup (soak overnight, cook for a whistle)
Apple - 1/2 cut in to cubes
Raw mango - 1/4 cup chopped finely

For dressing I normally use, french and greek dressing without fat. So for the party,
i used 2 tblsp of each dressing, little thyme, little oregano, 1 tblsp of olive oil mix all this thoroughly.

Now place all the beans, corn , veg in a bowl, on the top pour the dressing and mix nicely. In a salad plate or bowl, arrange lettuce leaves (keep the lettuce leaves in ice cold water for sometime, so that it will be crunchy)
then arrange the mixed vegetables, beans. Garnish with, non oil, non salt black olives. keep in the refrigerator for 4 hours, then serve.

Potato Thokku:
-------------

this is not new to everyone, the way i make i will not use much oil in my cooking. This is a favourite dish for my kids and husband.

Potato - 3 medium size, peeled, cut into small cubes. In a vessel keep in water, once it comes to boil, add potato cubes cook till it is 75% done
onion - 2 big, finely chopped
garlic - 6 to 8 cloves finely chopped
ginger - 1 tblsp finely chopped
tomato - 1 big size finely chopped
green chilly - 1 finely chopped
red chilly powder - 1 tsp
garam masala powder 1/4 tsp (optional)
fennel seeds powder - 1/4 tsp (optional)
Both garam masala powder and fennel powder is optional or u can use either one of these.
dhania powder - 1/4 tsp (optional)
turmeric powder - 1/4 tsp
salt - reqd

Seasoning:

oil - 2 tblsp
kadukku - 1/2 tsp
Cumin seeds - 1/2 tsp
curry leaves - few

In a iron kadai, do the seasoning with the seasoning items, then add onion, garlic, ginger , green chilly fry nicely till onion turns golden brown, cook in the slow fire throughout this procedure. Then add tomato, salt and all the powders, cook for a while, so that it will come like a thick thokku now add the potato cubes, stir nicely so that the potato cubes is covered nicely with the thokku and cook till the potato pieces becomes crispy, this will take nearly 15 to 20 minutes. We need patience, donot stir frequently. This comes nicely in iron kadai. Serve it with sambar rice, curd rice etc

300 grms ladys fingers cut into 1 inch pieces’
1 big onion chopped fine
2 pips garlic smashed
3 green chillies sliced fine
1 big tomato chopped
2 potatoes cut into cubes
½ inch ginger chopped finely
½ tsp coriander powder
¼ tsp tumeric powder
½ tsp chillie powder
Little garam masala powder
1 tbs oil
Salt to taste
Little coriander leaves, chopped.

Method:

Fry the lady’s finger till lightly brown. Keep aside.
Fry the potato cubes almost done. Keep aside

Heat the oil in a wok, add the onions and garlic sauté till soft.
Add in the , tomatoes, ginger, green chillies, masala and salt.
Stir fry till the tomatoes turn mushy.
Add in the fried potatoes and lady’s finger.
Sprinkle little water and let it simmer for a second.
Stir nicely and remove. Garnish with cut coriander leaves.

[tscii]Friends, the eve of Amavasai is the "thithi in which my F-I-Law passed away. For the last 3 months I have been feeding about 10 poor people on that day.

Today I cooked vangi baath and gave them.
Here is the recipe.

VANGI BAATH

Ingredients:

500 grms long grained rice, basmati or anything
400 grms young brinjals cut into 1 inch in length
1 cup ghee or oil
¾ cup tamarind juice from a lemon size tamarind
½ tsp tumeric powder
2 tsp channa dal
1 tsp urad dal
2 sprigs curry leaves
2 green chillies sliced optional
2 tbs roasted cashew nuts optional
Salt to taste

Masala Powder:
30 grms channa dal
30 grms urad dal
10 grms coriander seeds
4 tbs coconut scrapings
4 cloves
2 two inch cinnamon sticks
12 dry red chillies
1 tbs poppy seeds
½ tsp asafoetida

Method:
Dry roast all the ingredients separately till they turn light golden brown.
When cool grind them to a fine powder.

Cook rice in enough water and let it cool. Add 1 tbs of oil to it.
Mix well and keep aside.

Heat a wok, add the ghee, add in the 2 dals curry leaves, green chillies,
Sauté till the dals turn golden. Now add in the brinjals, tumeric powder.
Salt and stir continuously for 5 minutes.
Now add in the masala powder, tamarind juice and mix well.
Cover and cook at medium heat for about 5 minutes. stir in between.
When the brinjals are cooked, add the roasted cashew nuts.
Add little ghee if the mixture looks dry.

Now add this brinjal mixture to the rice and mix well.
This dish tastes best when it is warm.
This vangi bath should be a bit mushy and not very dry.
You can add 2 dry red chillies while tempering.
You can also garnish with cut coriander leaves.

Kugan, I was just pulling ur legs!!!... cooking oru kadal, naam ellam adhil chinna fish thaan...:)

I do make a cucumber side dish to go with phulkas... very simple... peel chop salad cucmbers after removing the seed if it's too mature... heat lil oil...splutter mustard... add the cucumber chilly pw,salt- mix well & cook for a min...switch off flame & add lemon juice... cucumber should still be crunchy even after all cooking...don't overcook it... It's a quick fix recipe & quite tasty too... learnt it from a cousin who was doing her catering science then...:)

I would love to have her bittergourd recipes... I do make the normal kulambu, poriyal, varuval, deep fry with it... adding semi ripe mangoes to bittergourd helps mask its bitterness... recipe was from here... http://happyburp.blogspot.com/2006/07/bitter-gourd-green-mango-curry.html

kugan,i cut brinjal in tiny pieces for vangibath, it is very tasty. with the same procedure we can make capsicum rice. Green capsicum is good for that. Coloured one will give sweet taste. Also with valakai also we can make. That also taste very good.

Hi K,

I prepared carrot halwa for father's day. My dad was really happy and he told tht it tastes so gud... :redjump:

It turned out so well... :D

My mom used to prepare carrot halwa and I prepared once before tht too with the help of my mom. But this time I prepared myself without my mom's help :swinghead:

I prepared it yesterday morning and kept it in fridge. Served it cold by evening :slurp: very very tasty, yummy. Mashing the carrots is a very gud idea :goodidea: ...

Started to prepare keerai, but power went off? Oh no :cry: have to grind cocunut n other stuff :hammer:
dont worry here is a receipe which can be done without a mixer grinder :D

Mulai keerai(amaranth leaves) mixed with moong dal :slurp:

Ingredients:

moong dal- 3 tbs
1 bunch of Mulai keerai
Asafoetida
Mustard seeds.
Urad dal
Jeera
Cocunut
Red Chillies - 3
Salt to taste

Method:

Wash the keerai and chop it nicely.

In a pot, put this keerai, add water, let it boil.
After ensuring that, keerai has been cooked well, add moong dal and let it cook.
Moong dal should not be over cooked, it should be in an eatable consistency.

Add salt, Scrap the Cocunut, add the cocunut shreds to the keerai content.
Cook for 5 mins, all will come together. By that time, simmer the stove.

Heat a pan, add little oil, add mustard seeds, let it pops up, add urad dal fry till golden brown, add red chillies, jeera, asafoetida powder and put this to the keerai pot.

Mix well, cook for another 2 mins. You are done :thumbsup:

Goes well with Kuzhambu rice/ Saambar rice/ Roti.

Preparation time: Juz 20 mins

Cocunut Podi :redjump:

Ingredients:

Cocunut shreds - (2 cocunuts)
Urad dal (Uluthamparuppu) - 1 cup
Bengal Gram (Kadalai Paruppu) - 1 cup
Red Chillies - 10 (more or less depends upon the spice taste)
Asafoetida
Salt - Depends upon the taste

Method:

Scrap the cocunut and keep the cocunuts shreds aside.

Heat a pan, add oil, add urad dal, bengal gram, red chillies.
Fry till light brown, dont over fry. Add asafoetida powder and keep it aside.

In a mixer grinder, add the above + salt and grind well.

Heat a pan, dont add any oil. Juz add the cocunut shreds directly to the pan, and shallow fry it until the water content is removed from the cocunut. After ensuring that the water content doesnt exist, remove from fire.

Now, add the ground content to the cocunut content, and mix well.
Cocunut podi is ready.

Cocunut podi can be mixed with rice or can be used as a side dish.

Preparation time: Juz 20 mins

Here is a quick recipe...

Paruppu Podi in Less than 5 minutes :redjump:

Ingredients:

Chick peas - 4 tbs
Red chillie powder - 1/2 tbs
Asafoetida
Salt - Depends upon the taste

Method:

In a mixer grinder, add all the above ingredients and grind well.

Paruppu podi is ready. :thumbsup:

Well you can add garlic also to bring out that andhra feel.
Today morning I prepared this (but for only 2 persons :noteeth: ), as it is amavasai today, I cudnt add garlic :D

Preparation time: Juz 3 mins

FISH TUNA CUTLET

Ingredients:

1 small can of tuna (flakes in water)-drained
1 small onion- minced
1 Potato-Boiled n mashed
1 red chilli - minced
1tsp Cumin Powder
1tsp Fennel Powder
1tsp Corriander Powder
1/4 tsp Black Pepper Powder
1 tsp Chilli Powder
salt
sprigs of corriander - minced
curry leaves- minced

In a bowl, place all the ingredients and mix it well. Make into balls n flatten abit. Heat oil in a pan, deep fry them till golden brown.

PRAWN AND QUAIL SAMBAL

Prawns - cleaned n washed
Quail Eggs- washed and drained

A ingredients to be grinded:
1 Big onion- sliced
Ginger and garlic paste
2 Green Chillies
6-9 Dried Chillies -soaked in hot water n remove the seeds

5 small shallots- sliced
1 Lemongrass (Serai)
1/2tsp Shrimp paste (Belachan)
Salt
1tsp Lemon Juice
Corriander leaves- garnishing

Method:
Heat pan with oil, Add in the Lemongrass, Shallots, and stir fry till nice aroma. Add in the A ingredients and keep stirring it well and all red in colour. Add abit of water and let it boil. Add in shrimp paste, salt, prawns, quail eggs and stir it very well and dry. Lastly garnish with corriander leaves n 1tsp lemon juice.

[tscii:e2b504e4d1]Night Kulambu ( simple paruppu kolambu ) whenever we went to shopping or function and came back home really tired amma used to make Night kulambu . I seriously donno how to named it Night kulambhu , but yea ... Its been one of my fav ;)


Ingredients:
Toor Dhal - 2 cups
Tomato – 1
Turmeric powder – 1 tsp
tamarind – sufficiently big lemon size
green chillies – 5 (small)
Oil
Salt to taste

Tempering :
garlic - 6 pods
pepper corns – 2
jeera – 2 tsp
kadugu – 2 tsp
curry leaves – 1 strand

Garnish : coriander leaves

Method :
1. In a pressure cooker put 2 cups of toor dhal , with 5 cups of water , turmeric powder , oil 2 tsp, chopped tomato , tamrind ( put it as it is , don’t try to extract the pulp or anything ), whole green chillies (do not chop), salt. Leave it for 3 whistles
2. Take the matthu ( kadaira kuchi ) I don’t know what they call exactly and nalla kadaiyavum so that all the tamarind and green chillies gets into the kolambhu
3. Do the thallippu with chopped garlic , peppercorns , jeeragam , kadugu and curry leaves.
4. Serve with rice or sukka rotti.

PS: If u do not wanna put the onions raw u could fry with oil before pressure cooking it.

Meal maker (Soya chunks ) – 1 cup
Tomato – 1 (chopped)
Onion – 1 (chopped)
Chilly powder – ½ tsp
Green chillies – 2
Salt to taste
Chat masala – ½ tsp
Curd – 1cup
Coriander leaves

Method :
Boil the meal maker (soya chunks ) with sufficient water and partially mash it (as in like a single soya chunk mashed into 4 pieces)
Take a bowl and mix all the ingredients. Garnish with coriander leaves and chat masala.

Do try and tell me how it worked :)

MOONG DAL PAYASAM

Ingredients:

1 cup split green moong dal roasted
1 cup thick coconut milk
3 cups thin coconut milk
¾ cups brown sugar or more to taste
3 tbs ghee
2 tbs of coconut cut into small pieces and roasted in ghee
¼ tsp cardamom powder
1 tbs cashew nuts roasted in ghee
1 tbs raisins roasted in ghee
Salt to taste.

Method:
Take 1 cup of split moong dal. Roast it till nice aroma comes.
Add little water to the brown sugar, melt it and strain it.

Now boil the moong dal and salt with the 3 cups of thin coconut milk.
Cook the dal on a medium heat till the dal is cooked.
Do not let the dal to over cook and become mushy.
Most of the coconut milk would have been absorbed by now.
Add more thin milk if needed.
Mash the dal lightly with a spoon, add the strained brown sugar.
Stir and make sure that the dal does not stick to pot.

Now add the cup of thick coconut milk and bring to boil.
Off the stove, add in the cardamom powder, cashew nuts,
Raisins and the coconut bits. Stir nicely. Let it rest for an hour.
The payasam will thicken a bit during this time.
You can serve it hot or chilled.

BITTER GOURD IN MASALA

Ingredients:

300 grms bitter gourds cut into small pieces
½ tsp tamarind paste
Salt to taste
Little jaggery to taste

1 tbs oil
1 onion chopped fine
1/2 tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
¼ tsp asafoetida powder

To roast and grind:
2 tbs coconut scrapings
2 tsp coriander seeds
1 tsp cumin seeds
½ tsp pepper corns
2 tsp urad dal
7 red dry chillies
2 tsp channa dal
Little oil

Method:
Roast all the ingredients in “grind” When cool grind to a fine paste.
Heat oil in a wok, add in the mustard seeds, cumin seeds.
When they splutter add in the curry leaves and the onions.
Sauté well, now add in the cut bitter gourds, tamarind paste,
Salt and asafoetida powder. Stir nicely. Cover and cook.

The bitter gourds would be a little tender now.
Add in the ground paste, stir nicely. You can sprinkle little water if needed. Cook over medium heat till the oil separates.
Add in the jaggery, stir well and remove.
Serve as a side dish.

Try this Saaru.
MANATHAKKALI KEERAI SAARU
Ingredients:
250 grm manathakkali keerai only the leaves
150 grms toor dal
2 green chillies sliced
3 garlic pips
tsp tumeric powder

1 tomato chopped
1 onion sliced
tsp mustard seeds
tsp cumin seeds
1 dry chillie cut into pieces
1 tsp tamarind paste diluted
Salt to taste
Oil
cup coconut milk ( optional )
Method:
Boil the dal with the tumeric powder, sliced green chillies,
And garlic.
After the dal is well cooked ,add the keerai.
Do not over cook the keerai. Remove from stove.
The consistency should be a bit watery.
Use a pan, add the oil, then the mustard seeds.
Also add the cumin seeds. Then add the dried chillies,
Chopped onions, and chopped tomatoes.
Let the tomatoes cook well, add in the diluted tamarind.
Let it boil well, pour the contents in the dal, keerai mixture.
Add salt. Add the coconut milk if you are using it.
Let it boil once and remove from stove, and serve.

Note: This keerai is called Black Nightshade in English.
It is supposed to cure stomach ulcers, and mouth ulcers.

SPICY TOMATO SOUP

Ingredients:

4 big red juicy tomatoes (see that the tomatoes are red in colour)
1/4 tsp tamarind paste (if your tomatoes are not sour)
Salt to taste

Roast and grind:
1 tsp coriander seeds
½ tsp cumin seeds
5 funugreek seeds
5 pepper corns
2 dry red chillie

To temper:
1 tsp oil
½ tsp mustard seeds
A few curry leaves
¼ tsp asafoetida powder
Little spring onion or coriander leaves for garnishing

Method:
Steam the tomatoes, cool peel the skin and puree them.
Add 2 cups of water, or to desired consistency.
Add in the salt, and tamarind paste.

Heat a pan with the oil. Add in the tempering things.
Add in the tomato puree and the ground powder.
Stir nicely to a boil. Remove and add the garnishing.
Serve the steaming soup with a bread toast.

BEANS SPROUTS FITTERS

Ingredients:

200 grms self raising flour
1 green chillie thinly sliced
¼ tsp chillie powder
1 onion thinly sliced
3 small chives cut into 1 inch strips
2 tbs cooked corn kernels
2 tbs of beans sprouts
Salt to taste
Water to make into a batter
Oil

Method:
Mix flour, salt, chillie powder and water and combine until the texture is smooth.
The texture should be thick and not watery.
Now add in the green chillie, onions, chives, corn kernels and beans sprouts. Combine well.
Heat a wok with cooking oil. When the oil is heated properly,
Scoop the batter in your hands and drop it into the oil.
Fry until they reach a golden brown colour.
Remove it to a plate covered with a kitchen roll.
Serve it with chillie or tomato sauce.

K, we dont make anythng so complicated. Just mix taugeh (bean sprouts) with white flour, sliced onions, sliced chilly and a little salt. Add water to make it lumpy. Spoon and deep fry. Thats all. :D

Can be eaten on its own or with rice with saambaar or rasam. :slurp:

[tscii] Dev, I have posted 2 bitter gourd recipes for you.

BITTERGOURD IN TOMATO SAUCE.

Ingredients:

300 grms long bitter gourd cut into small pieces
2 big tomatoes steamed and pureed
1 big onion chopped
2 tsp chillie powder
¼ tsp tumeric powder
¼ tsp asafoetida powder
2 tsp tamarind paste
½ tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
1 tbs oil
Salt to taste
Jaggery to taste (optional )

Method:

Add a liitle salt to the cut bitter gourds and keep aside. (squeeze out the liquid later)
Heat a wok with the oil. Add in the mustard seeds and cumin seeds.
After the seeds splutter, add in the onions, curry leaves. Sauté well.
Now add in the tumeric , chillie and asafoetida powders.
Stir well, add in the pureed tomatoes, and the tamarind paste.
Mix well, add in squeezed bitter gourd, salt and little water if the mixture is very thick. Let it cook till it is semi thick and the bitter gourd cooked. Add in the jaggery , stir nicely and remove.
Serve as a side dish or with bread.

Stuffed Brinjal in Tomato Onion gravy :slurp:

Ingredients:

Brinjal small size - 3 or 4
Red chillie powder
Turmeric power - 2 pinch
Ginger garlic paste - 1 tbs
Salt - Depends upon the taste
Tomato - 4
Onion - 2
Oil

To temper:

Mustard seeds.
Urad dal.
Bengal gram.

To garnish:

Coriander Leaves

Method:

Wash the brinjals. Part slice each brinjal into 4 or 6 sections juz like flower ;).

Grind 2 tomatos, 2 onions. Add salt, chilli power, turmeric powder, Ginger garlic paste and mix well..

Fill the brinjal with the mix prepared and stuff it as much as you can.

Now heat a pan, add 2 tbs oil and fry the brinjal. Let it half cook.
Then, remove from the pan.

Now grind the rest 2 tomatoes and mix it with the remaining tomato mix.

Now, heat another pan or the same pan :P . Put little more oil and add the tempering things. After tht, pour the tomato mix tht is prepared. Add little more salt as 2 tomatoes mix has been added as well.

Now put the half cooked brinjal and mix well. Close the lid for few more minutes. Let is cook well.

After ensuring that the brinjal has been fully cooked. Remove the fire.

Garnish and serve. Tastes yummmy :slurp:

Preparation time: Nearly 30 mins

Bored of preparing idly batter mix? Now here is receipe for you to prepare idly within 3 hours. :D

Rava Idly

Ingredients:

Rava - 2 cups
Yogurt/Curd - 1/2 cup
Oil
Salt - Depends upon the taste

To temper:

Mustard seeds.
Urad dal.
Bengal gram.
Green Chilli - Chopped
Ginger - Finely chopped
Asafoetida


Method:

In a bowl, mix rava and couple of tspn oil. Mix well. Take a handful of the mixture and try to squeeze it, somehow you will be able to shape up the rava. That is the consistency.

Now prepare butter milk out of the dahi.

Heat a pan with oil. Add all the tempering things. Put this to the rava mixture.

Now add the butter milk to the rava mix. Add salt.
Stir well to get a pouring consistency.

Leave it for 2 - 3 hours.

Now this would have become even more thicker than a pouring consistency. Pour this into the idly plates and cook for 15 - 20 minutes.

You are done, Rava Idly is ready. :thumbsup:

Serve hot with cocunut chutney. Heavenly fud... :D

naan fry pannala... fry panni senju paarungalen... definitely there will be a difference... :)

Initially add 1 tblspoon oil, mix well with rava... try to shape up the rava by pressing/squeezing it... u should be able to shape up, shape panna mudiyalanna add little more oil, try the same till u r able to shape up rava. :) exactaa evlo oil thevai nu theriyaadhu... :|

BTW, if u r able to shape up the rava... then only u will get soft idlies. try panni paathuttu sollunga selvi ka... :D

This is how I do kunukku.
There are many ways to do this kunukku.
Some even add chopped brinjal in the batter.

KUNUKKU

Ingredients:

200 grm s rice
100 grms channa dal
100 grms toor dal
2 tbs urad dal
2 tbs coconut scrapings
2 green chillies chopped
1 onion chopped (optional)
1 sprig curry leaves sliced fine
¼ tsp asafoetida powder
Salt to taste
Oil for frying.

Method:
Wash and soak the rice and dals for about 2 hours.
Drain the water well and grind every thing to a coarse thick batter.
The batter must be a little thicker than idli batter.
Add in all the other ingredients, except the oil.
Heat oil in a wok . when the oil is hot, make small balls out of the batter
Fry in hot oil till golden brown in colour.
Remove and serve hot with any sauce or chutney.

Here is how I do rava idli.

RAVA IDLI

Ingredients:
1 cup rava
1 tbs ghee
2 tbs oil
5 green chillies grind to a paste
1 cup of sour curds
cup finely chopped onions
1 tbs each of chopped curry leaves and coriander leaves
tsp of baking soda
Salt to taste

For seasoning:
tsp mustard seeds
tsp urad dal
1 tsp channa dal

For decorating: ( optional )
1 tbs of finely grated carrot
1 tbs of grated coconut

Method:
Dry roast the rava with the tbs of ghee.
When cool, mix with the curds, see that no lumps.
Heat oil in a pan, add the seasonings, and the
Onions and saut. Now add it to the rava mixture.
Also add in the salt, chillie paste, salt, the baking soda
the curry leaves and coriander leaves.
Mix nicely, oil the idli plate pour the mixture and
Steam it.
To decorate, after oiling the idli plate, sprinkle little
Grated carrot and coconut before pouring the idli batter.
Do not keep the mixed batter for a long time, for the
Rava will swell in the curds and you will get a soggy
( moluk moluk ) idli.
Serve it hot with coconut or any chutney of your choice.

MUSHROOM IN CREAMY SAUCE

Ingredients. (A)
300 grms fresh button mushrooms cut into quarters
¼ tsp cumin seeds
Little spring onion
Little oil

(B)
2 big onions chopped fine
1 tomato chopped fine
2 green chillies chopped fine
1 tsp ginger paste
1 tsp garlic paste
½ tsp garam masala powder
1 tsp chillie powder
10 cashew nuts ground into a paste
3 tbs of fresh cream
Little coriander leaves chopped
Salt to taste
Oil or ghee

Method: (A)
First add little oil in a pan, add in the fresh mushrooms, and cumin seeds, sauté the mushroom well till it is cooked.
Add in the spring onion, remove and keep aside.

(B)
Heat little oil in a pan, add in the chopped onions and sauté until the onions turn brown in colour. Remove and grind into a paste.

Now heat little oil again in the pan, add in the ground onions, tomatoes,
Ginger garlic paste and stir well.
Now add in the green chillies, red chillie powder, garam masala powder and keep on stirring until the tomatoes are mushy and you have a nice thick paste or gravy.
Add in the cashew nut paste, salt and enough water to form little gravy. Cook for a minute, add in the pre cooked mushrooms.
Stir for a minute, add in the fresh cream, remove and garnish with coriander leaves.

This is a wee bit different.

SPINACH PORIYAL WITH LEMON JUICE

Ingredients:

300 grms spinach leaves .
1 onion chopped
1 tsp ginger shredded
2 chillies cut into pieces
2 pips garlic smashed
½ tsp lemon juice or more
1 tsp lemon zest ( the skin finely shredded )
1 tsp oil
Salt to taste.
A pinch of sugar ( to retain the greenness in the vege)

Method:
Heat a wok with the oil. Add in the mashed garlic.
When it browns a little, add in the onions and ginger.
Sauté well till there is a nice aroma.
Add in the cut chillies and the spinach.
Add in the salt and sugar. Stir well.
Close the lid and let it cook for few minutes.
Open the lid, the spinach would have cooked.
Add in the lime zest and the juice.
Stir nicely and remove. Serve while hot.

]VANILLA ICE CREAM[/u]

1cup milk

A pinch of salt

3/4 cups sugar

1 vanilla bean

5 egg yolks

2 cup heavy cream

A few drops of vanilla extract

1. Heat the milk, salt, and sugar in a saucepan. Split the vanilla bean lengthwise and scrape the seeds into the milk with the tip of a paring knife. Add the bean pod to the milk.

2. Stir together the egg yolks in a bowl and gradually add some of the warmed milk, stirring constantly as you pour. Pour the warmed yolks back into the saucepan.

3. Cook over low heat, stirring constantly and scraping the bottom with a heat-resistant spatula until the custard thickens enough to coat the spatula. Strain the custard into the heavy cream. Rinse the vanilla bean and put it back into the custard and cream to continue steeping. Chill thoroughly, then remove the vanilla bean and freeze in your ice cream maker .

Thengai Maangai Pattani Sundal:

Pattani - 1 cup soak for 2 hours and pressure cook for one whistle with salt and remove water.

Grind:
======

Dry red chilly - 4
Coconut grated - 3 tblsp
Fennel seeds - 1/2 tsp
Pottukadalai - 1 tsp

In a kadai, add oil, add kadukku, urad dhal, perngayam, curry leaves, once kadukku pops up then add the ground masala , fry till the raw smell goes from it, add required salt, boiled pattani, fry nicely till the masala mix up with the pattani, then add some grated mango it. Even we can add grated carrot.
This version only i make at home. I will prepare with Groundnut, white channa, black channa, kidney beans, green peas and moong dhal.

SPICY BUTTER MILK

Ingredients:

4 glasses of thin butter milk, whisked well
1 green chillie chopped fine

Method:
Mix every thing well chill and serve.

just head to the supermarket n u can find the vanilla bean.. it looks more like a cinnamon stick... if you cant find it just add the vanilla extract/ essence (2tbsp) should be good

MASHED BRINJAL POTATO CURRY

Ingredients:
1 big potato
2 big brinjals
1 big tomato chopped
1 big onion chopped
5 green chillies sliced
2 dry red chillies
1 tsp tamarind paste
1 tbs coriander leaves chopped
½ tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
2 tsp oil
Salt to taste

Method:
Cut the potato and brinjals into small cubes.
In a pot add little water and the cut veges.
Cook till they are well cooked. Remove and smash them well.

In a wok add the oil, add the mustard seeds and cumin seeds.
Now add the onions, tomatoes, green chillies, red chillies and curry leaves. Saute them well.
Add in 4 cups of water , salt and the tamarind paste.
Let the mixture boil once, add in the well mashed potato and brinjal
Mix nicely, when the mixture starts to boil , off the stove.
Add the coriander leaves, remove and serve.
This will be a bit watery dish.

Suvai, surul aapam i suruttina aapam...;) jokes apart, it's the crepe made from all purpose flour, coconut milk, pandan juice, water & salt mixed together... they also add green color I believe...after making the appam, they put in some coconut filling & roll it up... I don't have the exact recipe but this is wht the surul aapam I know of...

Kugan, I once had some crepe with peanut filling in it in malaysia... what is it called as & how do we make it... it was a sweet dish...

Normally it will be coconut and brown sugar.

Here is the surul aapam

KUIH DADAR ( MALAYSIAN SWEET SNACK )

Ingredients

For the crepe:

1/2 cup of all purpose flour
1 large egg (optional )
1 cup of milk
1 tbsp of melted butter
1 tsp sugar
pinch of salt
green colouring or screwpine juice

For the Filling:

A:
3 tbsp sugar
300 grms grated palm sugar(gula melaka)
3 tbsp water

B:
600 grms grated coconut - white only
1 tbsp cornflour mixed with 2 tbsps water

Method:

For the crepe:

Mix the flour, sugar colouring, and salt in a large bowl.

Make a 'well' in the center of the flour mixture and add egg, melted butter and half of the milk.

With a whisk or wooden spoon, gradually stir the flour into the liquid mixture.

While stirring gradually add more milk until the consistency is that of cream.

When all milk is added, beat or whisk to remove all lumps.(sieve if you must)

Pour 1/4 cup of the crepe batter into preheated dosa kal Cook both sides on low heat until cooked (do not cook until brown)

Put 2 tbsp of coconut filling and roll like you would the spring roll.

For the filling:

Boil A to dissolve sugar. Add coconut, lower heat, stirring till almost dry.
Add the cornflour mixture and cook for 5 minutes.
Cool.
NOTE: Vegetarians can omit the egg.

Method:
Cook the soaked pattani with salt, drain and keep aside.
Grind the green chillies and ginger to a fine paste

Heat a wok with oil. Add in the seasonings ingredients fry well.
Add in the ground paste and sauté well.
Now add in the cooked pattani and stir well.
Off the stove, add in the coconut pieces and grated mango.
Serve as a snack.

Note: some people like to add coconut scrapings
Instead of the coconut pieces.
Some also like to add little lime juice to the sundal.

To day I am posting a recipe using the greens
of the radish. I will also post radish raitha,
radish poriyal.


RADISH LEAVES PORIYAL

Ingredients:

200 grms radish leaves.
50 grms peanuts dry roasted and powdered coarsely
1 small onion sliced
2 red dry chillie crushed
2 tsp coconut scrappings
½ tsp mustard seeds
½ tsp urad dal
Little lime juice
1 tsp oil
Salt to taste.

Method:
Wash and cut the greens.
Heat a wok with oil, add in the mustard seeds and urad dal.
When they splutter, add in the onions and sauté well.
Now add in the cut greens and salt. Fry nicely cover and cook .
After a minute, stir nicely again, add in the crushed dry chillie,
Coconut scrapings and the peanut powder.
Give a very good stir, remove and squeeze the lime juice over the greens. Serve hot as a side dish with rice.

Suvai, surul aapam i suruttina aapam...;) jokes apart, it's the crepe made from all purpose flour, coconut milk, pandan juice, water & salt mixed together... they also add green color I believe...after making the appam, they put in some coconut filling & roll it up... I don't have the exact recipe but this is wht the surul aapam I know of...

Kugan, I once had some crepe with peanut filling in it in malaysia... what is it called as & how do we make it... it was a sweet dish...

Dev, ungga " tiger curry " opps puli curry coming soon.


Suvai, you can make the surul aapam without the egg.
You can use coconut milk instead of the milk.
You can use green colour if you do not have the pandan juice.

Suvai I am posting a picture of pandan leaves.
You have to pound it to get the juice.
Pandan leaves are for Malaysians as vanilla pods are for westerners.

Kugan, am eagerly waiting for the tiger... it's my husband's fav curry... when in SG, i used to make it using baba puli curry masala... now tht we don't get the masala pwd here, i'm not able to find a good substitute... using sambar powder gives a diff taste... so I'm hoping ur recipe will end my search for a good malaysian style puli curry recipe...:)

BTW, any idea how to make this mixed veg curry served in the malay stalls... it's some coconut based curry... something like thai red curry by has a totally diff flavour & taste...

VENGAYA PULI CURRY

Ingredients:

10 small shallots, whole
5 pips of garlic, whole
2 dry red chillies cut into pieces
Little tumeric powder
Little asafoetida powder
1 lemon size tamarind soaked in 4 cups of water
2 tbs masala powder add water to make a paste
½ tsp mustard seeds
½ tsp fenugreek seeds
½ tsp urad dal
1 sprig curry leaves
2 tbs gingelly oil
Salt to taste

Method:
Squeeze out the juice from the tamarind and keep aside.
Heat a wok, add in the oil, mustard seeds, urad dal and fenugreek seeds.
Add in the onions, garlic, red chillies and curry leaves.
When the onions turn little brown add in the masala paste,
Tumeric powder, asafoetida powder and salt.
Stir fry the ingredients until oil separates.
Now add in the tamarind juice, let it boil on low flame till the raw small goes. Once the curry is slightly thick, remove and serve with rice.

Note: You can use coconut milk if you want.
The consistency of the curry is your choice.

Immm I can hear Dev murmuring, enna masala podi.
Ippadi pidi kudukaam sollurangga.

Here is the masala podi.


MASALA PODI

100 grms coriander seeds
100 grms dry red chillie
15 grms cumin seeds
10 grms pepper corns
20 grms channa dal
20 grms toor dal
3 grms mustard seeds
3 grms asafoetida
10 grms urad dal
1o grms rice
5 grms curry leaves
5 grms fennel seeds

Method:
Dry roast each ingredient separately.
For dry chillie and curry leaves use very little oil and roast.
When it cools , dry grind all the items finely.
Store in an air tight container

Here is a simpler version of the puli curry


PULI KULAMBU

Ingredients:


1 lemon sized tamarind extract the juice (this forms the gravy)
4 pieces garlic
10 small onions
2 green chillies slit
¼ tsp tumeric powder (
2 tsp chillie powder ( add little water to the three powders to make
2 tsp coriander powder ( into paste
½ tsp fenugreek seeds
1 tsp mustard seeds
1 tsp urad dal
2 dry red chillies broken
A pinch of hing
Curry leaves
Oil if possible gingelly oil
Salt to taste

Method:
Heat a pot. ( I have clay pot for this )
Add about 2 tbs of oil. Add the mustard seeds, urad dal
And fenugreek seeds.
Now add the onions, garlic, red chillie and curry leaves.
After the onions turn golden, add in the paste.
Fry all items in oil till the raw smell goes.
add in , tamarind juice and the
Slit green chillies. Add salt and hing powder.
Cook it on a slow heat. Once the kolambu is thick,
Remove and serve with steaming white rice.


Note: you can add any one vege of your choice and call it
That puli kolambu. E.g vengaya puli kulambu, brinjal puli
Kulambu and so on.

PALAK RAITHA
Ingredients:

300 grms palak leaves, chopped fine
5 tbs of yogurt or more
2 tsp coconut scrapings
1 tbs sour cream ( optional)
Salt to taste

To Season:
½ tsp mustard seeds
¼ tsp cumin seeds
1 tsp urad dal
3 green chillies chopped fine
1 small shallot chopped
2 tsp oil


Method:
Drain all the water from the cut palak.
Heat a wok, add the oil and the seasonings.
Stir nicely, add in the cut palak and the salt.
Cook till the palak just gets wilted.
Remove and cool. Now add in the yogurt, sour cream
And the coconut. Mix well, chill before serving.
Goes well as side dish for rice.

BTW, the puli curry I've had used to have mixed vegs & coconut milk in it... can we use ur recipe to make something like tht or is it a diff recipe... I guess ur VENGAYA PULI CURRY can be used for mixed veg puli curry too...enna solreenga...

Dev, I have written in the recipe that if you like you can use coconut milk and any vege of your choice.
Normally they will use vendi, radish or brinjal.

I did not use coconut milk for healths sake.
Normally in the stalls they will use coconut milk to make it tasty.
They also add a bit of aji-no- motto.

I do maa villku and offer prayers on all the Aadi fridays.


MAA VILLAKKU

Ingredients:

300 grms rice soaked
150 grms fine brown sugar
2 tbs honey
2 tbs coconut scrapings
2 tbs ghee
½ tsp cardamom powder

Method:
Soak the rice for about ½ an hour.
Drain well and spread on a cloth to dry a little.
Grind the rice in a dry grinder and sieve the flour.
Add the brown sugar , honey, coconut scrapings
And the cardamom powder. Add little ghee if you need it to bind the flour.
Mix well and shape this dough into a lamp.
Put it on a plate, pour ghee and place a wick.
Put it in your alter and light the wick.
Offer prayers to God.

the curry u make looks perfect color maybe the puli we get here makes the curry a little brownish.....yrs surely looks more appetizing ;-)

Kugan, wht I used to do is season mustard,fenugreek & curry leaves...add some onions & saute...add lil tomato,turmeric & saute till pulpy... add vegs of choice, water & cook till 1/2 done... add tamarind juice, baba or selvi brand puli curry masala ,slt & cook further till vegs are almost done...atlast add coconut milk & cook on low flame until it starts to simmer... tht's it...one of this brand's puli curry masala has tamarind in it...I don't remember which one...so just chk the ingredients before adding tamarind juice & adjust accordingly...the taste of my puli curry depends compltely on the masala powder...

Adding tomatoes is optional...U can use meat masala too... both taste good... I used to make veg dhalcha using meat masala(Baba brand) & it will be good too...

Tomato rice, this recipe belongs to my dearest uncle Hemantji.
After trying out his recipe I never cook any other style

--- Tomato Rice ---

TOMATO RICE

Rice 1 cup Tomatoes 300 gms. Onions 3 nos.
Ginger 1.5"Piece Garlic 8 to 10 cloves Shelled Peas 1/4 cup
Carrots 1 no. Curry leaves 2 sprigs Green chillies sliced 4 to 5 nos.
Mustard seeds 1/2 spoon Jeera 1/2 spoon Cloves 6 to 8 nos.
Cinnamon stick !" 4 pieces Chilli powder 2 spoons Turmeric powder 1/2 spoon
Oil 3 ladlefuls Salt to taste Black Pepper powder 1/4 spoon
Garam Masala Powder 1 spoon

Cook rice in a manner where all the grains are separate .Take care to add a spoon of salt when you are cooking rice. Set aside the cooked rice. Dice Tomatoes in small 1/4 " pieces , shred Ginger ,cut Garlic in very small pieces ,shell the peas and dice the Carrots in small pieces. Also cut Onions in small pieces.

Now take half the quantity of oil in a kadai and set it on medium heat, add Mustard and Jeera seeds and when the Mustard starts to crackle, add Tomatoes and stir fry on medium heat till the Tomatoes start leaving oil. Now add Diced Onions and stir fry till Onions become Translucent and soft, now add cut Garlic and Shredded Ginger and fry in the Gravy for three to four minutes. Finally add 1 spoon of Garam Masala to Tomato mix and set it aside after frying the Garam Masala for fifteen to twenty seconds. Some people prefer to fry Garlic first and later add Tomatoes and Onion, but I am not of that view.

Steam cook Carrots and Peas after adding a bit of salt and sugar to retain the natural colours

At this stage, add salt, Chilli powder, Turmeric powder, Black pepper powder, Green Chillies and curry leaves. Heat the mixture for about two minutes. The consistency of Tomato Gravy should be thick like Puliohara Gojju.

Now when the Tomato Gojju is medium cold, take one ladle of oil in a Tempering ladle and add cinnamon and Cloves and heat. When the cloves start puffing, pour the tempering in Gojju.Mix it well and finally start mixing Vegetables and Tomato Gravy and Rice layer by layer. Finally mix the whole thing thoroughly and reheat in a large mouthed Vessel with steam only. Your Tomato Rice is ready.!!! Serve piping hot.

CLUSTER BEANS PORIYAL

Ingredients:

300 grms cluster beans cut into small pieces
2 tbs channa dal soaked
2 dry red chillies broken
1 tsp sambar powder
¼ tsp tumeric powder
4 tbs coconut milk thick
1 tbs oil
1 onion sliced
½ tsp mustard seeds
½ tsp cumin seeds
1 sprig curry leaves
Salt to taste

Method:

Heat a wok with oil, add in the mustard seeds and cumin seeds.
Add in the soaked channa dal, onions, curry leaves and red chillies.
Sauté well, add in the cut cluster beans, sambar powder
Tumeric powder and salt. Stir well, sprinkle little water, close
The wok and let it cook for 5 minutes on low flame.
Remove the cover , give a good stir add in the thick coconut milk.
Stir nicely again, the milk will be absorbed.
Remove and serve as a side dish.

Note: you can use coconut scrapings instead of the milk

such item in their company.
I do not think we have Selvi brand in Malaysia.

Hope this is the one.

MIXED VEGES IN COCONUT MILK

Ingredients:
200 grms cabbage sliced
4 long beans cut into 1 ½ inches long
1 long purple brinjal cut into 2 inches in length
2 potatoes cut into lengths
2 tofu fried and cut into cubes
3 red fresh chillies sliced
1 big onion sliced
4 cups of thin milk from 1 coconut
1 cup thick milk from the coconut.
Salt to taste
2 tbs oil
Lime juice to taste

To Grind:
5 fresh red chillies + 3 bird’s eye chillies
5 shallots
3 garlic
3 serai or lemon grass
1 inch galangal
1 inch fresh tumeric

Method:
Heat oil in a wok, add in the ground paste.
Sauté well till there is a good aroma and oil separates.
Add in the onions, fresh chillies, potatoes, long beans
And brinjals. Add in the 4 cups of thin milk, cook for a minute.
Now add in the cabbage and tofu and salt.
When the veges are cooked add in the thick coconut milk.
Give one boil and remove. Add lime juice.

Note: normally this kuah is made during the festival
It is served with the cubed rice, along with chicken rending.
I have ommited fresh prawns, and also they add suhun, a type of noodles, soya sheets called fucuk and also preserved soya beans
Called tempe.

I'll try it as soon as I get fresh turmeric...they don't usually sell fresh turmeric in my place..so it would be a task finding it... or I guess I can always grow my own turmeric... :think:

Sardine Bread Rolls

Ingredients:

1 can of Ayam Brand Sardine- Clean the fish
1 large Onion- Sliced
1tsp Ginger & Garlic paste
1tbsp Lemon Juice
3tsp Chilli powder
salt
oil
Bread Loaves- trim the sides
1 egg- well beaten

Method:

In a pan of hot oil, add in the onions, ginger & garlic paste and saute it till nice aroma and onions turn golden brown. Add in the chilli powder and a little bit of water. let it boil well. Add in the salt and lemon juice.Letit boil another 5mins. Lastly add in the sardine and let it cook well. The sardine has to be very dry and remove from heat and let it cool.
In a frying pan, add enough oil for deep frying. on a board, place the bread, add abit of the sardine and roll it nicely and deep it into the beaten egg and fry it till golden brown. Drain oil and serve it with a cup of hot tea.

RAVA KICHIDI

Ingredients:

300 grms rava
100 grms moong dal
2 green chillies cut into small bits
½ tsp pepper crushed
1 tsp cumin
1 tsp young ginger cut into bits
a pinch of asafeotida
10 cashew nuts fried in ghee
4 tbs ghee or oil ( less or more as it suits you )
salt to taste
21/2 cups of water

Method:

In a tablespoon of ghee, fry the rava till you get a good aroma, remove.
Dry roast the moong dal till you get a good aroma.
Boil it in water till its fully cooked, but still retains its shape.
In a wok,add 2tbs of ghee.
Add the pinch of asafeotida, followed by the cumin, crushed pepper,
Green chillies, and ginger. Fry for a second and add 21/2 cups of water.
Let it boil. When it boils, add salt and the cooked moong dal.
Now slow the fire, and add the rava little by little, and cook
Till its cooked. Add the last tablespoon of ghee and remove it.Garnish it with the fried cashew nuts.
Serve it with kara chutney.



KARA CHUTNEY

Ingredients:

a peanut size asafotida
half a tablespoon bengal gram dhal
half a tablespoon urud dhal
8 nos. red chillies ( more if you like hot or less )
one big onion
one big tomato
salt to taste
tamrind to taste
oil

method:
In a kadai put one tablespoon oil. Fry asafotida,bengal gram dhal,urdu dhal, red chillies,separately.Cut the onion and tomato into big pieces and fry in a teaspoon of oil till the raw smell goes. Add tamrind and salt to it and grind all the above to a fine paste.
No need to temper.

Dev,here is how I make rava ponggal

SWEET RAVA PONGGAL



Ingredients:

1 cup rava roasted with 2 tsp of ghee

cup channa dal lightly roasted and boiled till soft.

5 cashew nuts roasted in ghee

10 raisins roasted in ghee

tsp cardamom powder

1 cup sugar

cup coconut scrapings optional

3 tbs of ghee

3 cups water

A pinch of salt.



Method:

In a wok add the ghee, when it is a little hot add in the water

And the channa dal and allow the mixture to boil.

Slow the fire and add in the roasted rava little by little

Stirring all the time. Once the rava is cooked, add the sugar

The cashew nuts, the raisins and stir continuously till

The sugar melts and one boil comes.

Add the grated coconut, and cardamom powder, mix nicely.

Remove from stove when it comes to thick consistency.

Serve hot or cold.

Of course I used mock chicken.

HONEY CHICKEN

300 grms chicken pieces
Oil to fry
Salt to taste

3 star anise
2 cardamoms
2 young pandan leaves sliced very fine (optional) (A)
2 lemon grass smashed
2 sprigs curry leaves

½ inch ginger sliced fine
2 pips garlic chopped
1 big onion chopped

1 tbs chillie powder
2 tbs coriander powder
2 tsp cumin powder

3 tbs chillie sauce
3 tbs tomato sauce
2 tbs honey
20 grms sesame seeds roasted
1 tbs lemon juice
Salt to taste
2 tbs oil

Method:

Marinate the chicken with salt and fry chicken until semi cooked.
Heat oil in a wok, and fry the ingredients in (A) until the pandan leaves are crisp.
Then add in the ginger, garlic and onions. Sauté well.
Add in the half cooked chicken. Stir well.
Add in the chillie, coriander and cumin powders.
Add about ½ a cup of water and salt.
Bring to a boil, add in the chillie sauce, tomato sauce,
Honey, and lemon juice, add salt if needed.
Cook in slow fire until the dish is dry. Remove and

As before I made it with mock mutton.


LEMON MUTTON

Ingredients:
250 grms mutton pieces
½ tsp tumeric powder
Salt to taste
1 sprig curry leaves
2 tbs cut coriander leaves
1 tbs lemon juice or more to taste
2 tbs oil


To Grind Fine:

2 tbs coconut scrapings
1 tbs cumin seeds
1 tbs black pepper
2 one inch cinnamon sticks
4 cloves
1 big onion chopped
½ inch ginger chopped
5 pips garlic
5 dry red chillies

Method:
Put the mutton with the tumeric powder and salt
In a pot, add little water and cook till mutton is cooked.
Or you can pressure cook the mutton for 2 whistle.

In a wok, add the oil, curry leaves and the finely ground paste.
Cook stirring till oil seperates. Add in the cooked mutton.
Cook till the gravy is thick, add in the lemon juice.
Remove and garnish with the cut coriander leaves.
Serve with rice or chappati.

POTATOES IN CREAMY MASALA

Ingredients:
300 grms potatoes boiled and cut into cubes
2 bay leaves
1 big onion chopped
4 garlic pips mashed
1 inch ginger minced
1 tomato chopped
2 green chillies chopped
1 tsp coriander powder
Little garam masala powder
Little tumeric powder
4 tbs curds
¼ cup green peas
Salt to taste
1 tbs oil
Little cut coriander leaves.

Method:

Heat oil in a wok, add in the bay leaves.
Now add in the garlic, ginger and onions.
Sauté nicely, add in the chopped tomato.
Add in the coriander powder, tumeric powder
And garam masala powder. Cook till the tomato
Turns muchy.
Now add in the green chillies and the boiled cut potatoes.
Add salt and stir nicely and slowly. Add little water if needed.
Now add in the curds and green peas. Cook for a minute.
Remove and garnish with coriander leaves.
Serve with rice or chappathi.

Sudha's milagootal recipe:

step 1: Pressure cook 100 gms thoor dal or pasi paruppu.

step 2:cook 1 bunch of thandhu keerai or mulai keerai or 1 banglore kathrikai(chow chow), 1 pudalai or cabbage. that separately with little salt and little turmeric and perungayam powder.

step 3:In a kadai pour little oil and fry ulundha paruppu 2 table spoon, one dry chilli and one tbl spoon of milagu. add little perungayam also in the oil. add little seerakamand dry grind the fried stuffs. After it is powdered add quarter coconut-shredded, little water and grind, to make a masala.

step 4:Now in a kadai put one spoon oil, kadugu, ulundu and pour the pudalai which is cooked, with the water. Add the paruppu also and mix. Then add the masala and salt. Give it a good boil until it becomes think(kootu consistency). Add malli thazhai.

Serve with rice or chapathi or dosai...:slurp:

LEMON RASAM

Ingredients:

100 grms toor dal
A pinch of tumeric powder
1 small tomato chopped fine

2 tsp ghee
1 sprig curry leaves
½ tsp cumin seeds
½ tsp mustard seeds
A pinch of asafetida
Salt to taste

To grind coarsely:
2 dry red chillie
2 pips garlic
1 tbs coriander seeds
1 tsp black pepper
1 tsp cumin seeds

Method:
Cook the toor dal with the tumeric powder in 5 cups of water.
See that the dal is well mashed.
Heat a wok, add in the ghee, add in the mustard seeds,
Cumin seeds and curry leaves. Stir well.
Now add the chopped tomatoes and sauté well.
Add in the asafoetida powder , the toor dal water 3 cups,
And the coarsely ground powder and salt.
Let it boil for about 5 minutes or more.
Remove and add the lemon juice to taste.
Garnish with the cut coriander leaves.
Serve with steaming rice.

Picture of the Maa vilaku is very nice. I have never seen maavilaku like this but have tasted it. Do you leave the vilaku until all the ghee is used up? I tried the cluster beans poriyal and vengaya pulli curry. Both lovely. We call it venthaya kulambu as well. Masala podi is very useful for any curry. I am going to make rava idly and thengai chutney today and let you know.

Here is my mil's recipe for channa- koNdaikadalai- suNdal:

Soak channa overnight.
Pressure cook the soaked channa.
Heat oil in kadai and add chopped small onion and curry leaves and cooked channa and salt. Add to this a paste of these ingredients (prepared grinding in the mixie):
dhaniya seeds -2 tsp
cumin seeds -1/2 tsp
red chilli -2

Saute in slow fire till the gravy(paste) dries. Add coconut flakes and it is ready now to eat. A different, spicy favourite in our family.

CUCUMBER MASALA

Ingredients:
200 grms old cucumber cut into ½ inch pieces
2 green chillies slit 4 and cut across
1 sprig curry leaves
1 tsp tamarind paste or a little more
1 small tomato chopped fine
1 tbs coconut scrapings
1 tsp coriander powder
1 tsp chillie powder
¼ tsp tumeric powder
Little asafeotida powder
½ tsp cumin seeds
½ tsp mustard seeds
1 tbs oil
1 tbs cut coriander leaves
Salt to taste

Method:
Mix the 3 powders in 1 cup of water, keep aside
Heat oil in a wok, add the mustard seeds and cumin seeds.
Add in the curry leaves, stir nicely.add in the green chillies
Tomatoes, sauté nicely, add in the tamarind paste and the
Mixed 3 powders. Stir nicely let it simmer for some time.

Add in the cut cucumber and salt. Let it simmer again.
The cucumber must be cooked, but still firm.
Add in the coconut scrapings and stir well.
The dish should be semi dry. Remove and garnish
With the cut coriander leaves. Serve as a side dish.

EGGLESS CARROT CAKE

Ingredients:

¾ cup of water
1 cup sugar
125 grms of butter
1 tsp soda bicarbonate

2 cups self – rising flour
½ cup fresh milk
1 cup grated carrot
1 tsp vanilla essence

Method:
Boil the water , sugar and butter till the butter melts.
Let it cool nicely, add in the tsp of soda bicarbonate.
Slowly add in the flour milk and carrot.
Add in the essence. Bake for an hour at 180 degrees C
Or till a skewer comes out clean.

Note: You can use 1 cup of mixed fruits,
Or 1 cup of mashed bananas with little lime juice.
Add essence according to ingredients used.

Well neways akka passed on a nodiyil ready bread soup when i was talking to her this afternoon

Fresh bread soup.

Ingredients
Fresh bread slices - 4
Onion (finely chopped)- 50gms
Garlic pods - 3
Butter
Cilantro to garnish
Salt , oregano and pepper to taste
Boiling water - 1 cup

Method
1.Toss the a slice of butter to the pan , followed by chopped garlic and finely chopped onions.
2.Cut the edges of the bread and make bread crumbs from the fresh bread.Stir it to coat the garlic and onions
3. Now add 1 cup of boiling water
4.Add salt , oregano and pepper finally and garnish with fresh cilantro.

This soup has a smooth texture.
PS: You can add cornflour to add more texture and richness

Try it and lemme know how it works

FISH BRIYANI

Ingredients:
1/2kg Red Snapper - washed and cleaned
6 green chillies )
1tbsp Ginger n Garlic paste) grind into paste
5-6 small onions)
1 tsp cumin powder
1tsp Tumeric powder
2tsp chilli powder
Cashew nuts & Almonds- paste
Bunch of Corriander leaves
Bunch of Mint leaves
1 large screwpine leave- pandan leave
Cinnamon Stick
Cardamons
Cloves
Star aniseed
1 large Tomoto
1 large onion- sliced
1/4 cup water
salt

Method:
In a Pan, add in ghee and let it heat up well. Add in the Spices, Screwpine leave, onions and saute it till golden brown. Add in the grinded paste and stir it well till nice fragrant. Add all the spice powders, corriander & mint leaves. After 5mins later add in the tomatoes and 1/4 cup of water and let it boil. After 5 mins, add in the grinded almond n cashew nut. Add in the fish and salt and let it boil till fish is well cooked and thickend. It has to come into a fine masala paste.

Briyani rice
1 cup of basmati rice - washed n drained
2cups of water
1 screwpine leave
2-3 small onions- sliced
1tsp ginger & garlic paste
cinnamon stick
bayleaves
cloves
1tsp rose water
1tbsp Ghee - clarified butter
sprigs of mint leaves
sprigs of corriander leaves
sliced red chillies
fried onions
saffron colouring- mixed with water

Method:
In a rice cooker pan, add in ghee, spices,screwpine leaves, onions & ginger & garlic paste. saute till golden brown and nice aroma. add in the rice and stir well for 5mins. Add in 2cups of water, rose water, salt and mint leaves. cook the rice in the rice cooker.

Once rice is well cooked. Shift the rice into another bowl. Add in 1st layer of briyani rice. Add in saffron colour ans still the rice add in the fish masala. Cover the fish with 2nd layer rice. Sprinkle the red chillies, corriander and mint leaves. follow the same procedure till rice cooker is full. Put it back into the rice cooker and keep it warm for 30mins.

PINEAPPLE ACHAR

Ingredients:
1 Small Pineapple - cut into cubes - drain the excess water
1tsp Mustard seeds
2 small onions- sliced
1tsp Chilli powder
3tbsp Tamarind Juice
1tbsp Sugar
salt
Sliced red chillies

Method:
In a hot pan of oil, add in the mustard seeds and onions ans saute it lightly. Add in the Pineapples stir fry. Add in the sugar and tamarind juice with a pinch of salt . Stir fry till nice n dry and remove from stove. Garnish with sliced red chillies.

Thats nice to know that u tried the fish briyani.... its a very diff way of making the briyani.

Kugan will soon post another carrot cake recipe but this recipe is with oil n not butter. Usually in US and Australia they bake carrot cake with Oil and not butter for xtra moist.

Try it out , its tasty.


TOMATO CURRY

Ingredients:
5 big ripe red tomatoes
1 big onion chopped
1 tsp chillie powder
2 green chillies chopped
1 tsp rice powder
1 sprig curry leaves
Little tumeric powder
Little asafetida powder
½ tsp mustard seeds
1 tsp urad dal
1 tbs oil
Salt to taste
Little cut coriander leaves.

Method:
Blance the tomatoes and remove the skins.
Mash it nicely to form puree.
Add chillie powder, salt and tumeric powder.
Keep it aside.
Heat oil in a wok, add in the oil, when hot add
The mustard seeds and urad dal. Let it splutter.
Add in the asafetida powder, onions, curry leaves
And the green chillies. Sauté well. Let the onions brown a little.
Add in the mashed tomato and mix well. Let it boil.
When it boils, mix the rice flour with little water.
Add in the curry and mix well. Cook on medium heat for a minute.
Remove and garnish with cut coriander leaves.

VEGES WITH BLACK EYED BEANS

Ingredients:

100 grms black eyed beans soaked over night
100 grms French beans chopped into ¼ inch pieces
100 grms cabbage sliced
1 big tomato chopped fine
2 tsp of sambar powder
1 tsp of tamarind paste
½ tsp mustard seeds
1 tsp urad dal
1 sprig curry leaves
2 tsp oil
1 tsp lime juice
Salt to taste
Little coriander leaves

Method:
Cook the black eyed beans and mash it a little.
Heat oil in a wok, add in the mustard seeds and urad dal.
Let it splutter and add in the curry leaves and tomatoes.
Add in the sambar powder and cook till the tomatoes are mushy.

Add in the cabbage and beans, add little water and let it boil.
Add in the tamarind paste, asafoetida powder and salt.
When the veges become tender stir well and add the mashed beans.
Stir well until the beans blends well to become a thick gravy.
Remove and add the lime juice and garnish with the coriander leaves.
Serve it with roti or as side dish.

[tscii] VEGETARIAN CURRY MEE

Ingredients:

500 grms yellow noddles washed and drained
1 cup vegetarian curry paste
1 can vegetarian mushroom soup
2 sprigs curry leaves
2 stalks lemon grass smashed
1 liter water or more
¼ liter thick coconut milk
½ tsp sugar
¼ cup oil
Salt to taste

Garnishing:
100 grms cucumber shredded
100 grms long beans cut into 1 inch length and blanched
50 grms bean sprouts blanched
50 potatoes boiled and diced
100 grms tofu puffs sliced

Vegetarian curry paste:
50 grms fresh red chillies
10 grms dry red chillies
1 tbs meat curry powder
25 grms candle nuts
15 grms coriander seeds
5 grms fresh tumeric root
5 small onions
10 grms galangal
2 sprigs curry leaves
2 stalks lemon grass


Method:
Combine all the ingredients for the paste in a blender.
Blend to a fine paste, adding little water if necessary.
Remove and keep aside.

Heat a wok with the oil, add in the lemon grass and curry leaves.
Add in the curry paste and sauté well till the oil separates.
Mix the mushroom soup with the water and add to the chillie paste
Add salt and let it come to a boil and simmer on medium flame for about 20 minutes.

Add in the sugar and the thick coconut milk.
Let it boil once and remove.

To serve, assemble individual portions of noddles
About 100 grms in a bowl, top with the various garnishes.
Then scoop enough hot curry over it.
Serve it piping hot.


Note: You can use all coconut milk instead of the mushroom soup.

FOR NON_VEGETARIANS:
You can serve wedges of boiled eggs and boiled shredded chicken.
You can use chicken broth and coconut milk instead of water.

150g wholemeal flour
150g plain flour
2 tsps baking powder
1½ tsps bicarbonate of soda
1tsp fine salt
2 tsps ground cinnamon
½ tsp ground ginger
260g soft brown sugar
290ml corn oil
4 medium eggs, lightly beaten
300g grated carrot
80g walnuts, chopped
80g raisins
Grated rind of 1 lemon

Method

1. Sift together the first seven ingredients
2. Preheat oven to 1800 C/3500F/Gas 4
3. Grease and line a loaf tin
4. Put all sifted ingredients into a bowl. Add in sugar, oil and beaten eggs.
5. Beat well. Add the remaining ingredients and mix well.
6. Pour batter into a loaf tin and bake for 80 mins our until a skewer comes out clean
7. Leave cake to cool thoroughly before icing (optional)

Lemon Cheese Icing
125g cream cheese at room temperature
1 tbsp lemon juice
Grated rind of 1 lemon
250g icing sugar, sifted
60g butter

Beat all ingredients together until smooth and slather over cake.

SWEET BOLI

Ingredients:
1 ½ cups of all purpose flour
1 ½ cups of water
Little yellow colour
A pinch of salt

1 cup Bengal gram dal
¾ cup of grated coconut
1 cup of powdered sugar
¼ tsp cardamom powder
A pinch of salt
5 tbs of ghee

Method:
Mix the flour, water, salt and yellow colour.
Mix it to a soft dough, add little oil on the surface.
Keep it aside.

Soak the dal for about 2 hours.
Then cook the dal in water till soft, but not mushy.
Drain the water completely,
Grind the dal along with the coconut and sugar to a fine paste.
Heat up a non-stick pan and add this mixture with
The salt and cardamom powder. Stir over a medium heat
Till the mixture is solid. Let it cool.
With the mixture make it into lime sized balls.

Take a little of the dough, cover the dal ball with the dough.
Take a plastic sheet and flatten out the dough with your fingers.
Apply little ghee or oil to your fingers when you flatten.
Heat up a dosa kal, when it is hot place the boli and pour
A tsp of ghee all around and cook.
Turn and cook on the other side until little brown spots ap

Ingredients:

3 pips galic
½ inch ginger

Method:
Cook the soaked peanuts with little salt till cooked.
Set aside.
Cut the brinjals into 1 ½ inches in length. Fry it in oil.
Set aside.
Heat a wok with the oil,add in the cumin seeds and mustard seeds.
After they splutter, add in the sliced onions, sauté well.
Add in the sliced tomato, tumeric, chillie powder, salt and garam masala. Mix nicely add in the ground paste. Sauté well till oil separates.

You can sprinkle little water if the mixture is very dry.
Now add in the boiled peanuts and fried brinjals.
Taste for salt and remove. Garnish with cut coriander leaves.
Sprinkle little lime juice.

[tscii] Try this simple dish.

MOTCHA WITH DRUMSTICKS

200 grms field beans or motchi soaked overnight
3 drum sticks cut into 1 ½ inches in length
½ tsp mustard seeds
½ tsp tumeric powder
2 tsp chillie powder
1 tsp coriander powder
1 sprig curry leaves
1 tbs oil
Salt to taste
¼ tsp jaggery (optional)

To Grind To A Fine Paste:
2 tbs scrapped coconut
3 pips garlic
3 small shallots

Method:

Boil the motchai with little salt till it is cooked.
Set aside.

Heat a wok with the oil, add in the mustard seeds.
When it splutters add in the curry leaves.
Add the ground paste and sauté well.
Add in the chillie powder, tumeric powder and coriander powder.
Mix nicely, add in the cut drumsticks and ½ cup of water.
Add in the salt and let the drumstick cook.
Add in the boiled motchai and mix nicely.
Add little water if the gravy is very thick.
Add in the jaggery, mix nicely and remove,

CAULIFLOWER SPICY MASALA

Ingredients:
250 grms cauliflower florets
1 ½ tsp chillie powder
¼ tsp tumeric powder
2 tsp lemon juice
Little cut coriander leaves.


To Dry Roast And powder
1/2 tsp mustard seeds
½ tsp fenugreek seeds
½ tsp coriander seeds
¼ tsp cumin seeds
¼ tsp asafoetida

To Season:
2 tsp oil
¼ tsp mustard seeds
3 dry red chillies cut into pieces
1 sprig curry leaves

Method:
In a wok add the oil and the seasonings.
Add in the cauliflower florets, chillie and tumeric powders.
Sprinkle little water , cover and cook.

When the cauliflower is 3/4th cooked, add in the salt and
The ground powders. Fry over high heat.
When the powders have nicely mixed with the vege,
Remove and add the lemon juice.
Garnish with the cut coriander leaves.

Baby Corn masala gravy :slurp:

Ingredients:

Baby Corn - 5 or 6
Red chillie powder
Masala power - 1/2 tea spoon
Ginger garlic paste - 1 tbs
Salt - Depends upon the taste
Tomato - 3
Onion - 2
Oil
Sugar - 1/2 tea spoon

To temper:

Mustard seeds.
Urad dal.

To garnish:

Coriander Leaves

Method:

Slice the baby corn into 8 pieces if it slightly big, or 6 pieces if its small... or slice it depend upon the size of the baby corn.

Simmer the baby corn in water for 10 to 15 mins. Then drain the water and keep it aside.

Cut the tomatoes and onioan and grind it well. Keep it aside.

If Ginger garlic paste is available then fine, or else grind the ginger and garlic into fine paste and Keep it aside.

Now heat a pan, add oil and fry the tempering things.

Now add the ginger garlic paste and fry for a minute.

After tht, dip each baby corn slice in the tomato onion mix and add to the pan. Fry for 2 - 3 mins.

Now add the tomato and onion mix into the pan, add salt, chilli powder, masala powder, sugar. Mix it well and close the lid.

Let it cook for 15 mins.

After ensuring that the baby corn has been cooked and mixed well with the gravy. Remove from fire.

Garnish with coriander leaves and serve. Tastes yummmy :slurp: .

Enjoy with Roti.

Preparation time: Nearly 40 mins

Kugan, the brinjal curry looks very tempting... can we steam the brinjals instead of frying?...

Yes Dev, you can steam the brinjals and add to the dish.
or you can add raw brinjal to the masala and cook
with the masala before adding the groundnuts.

Normally the long purple brinjals cook very fast.
Frying is for extra taste.

Kugan, we usually get the small purple brinjals...I've seen the long green brinjals also here... not sure abt the long purple ones... but I guess the green one will be a good substitute.. will try it soon & let u know...
