Hello Pavithra!
Here are the recipes you have asked:
Cut one medium cauliflower into florets and wash them. Soak them in hot water for ½ hour. Make a better with ½ cup of corn flour,1sp ginger paste,1sp garlic paste , 1sp gram flour, ½ cup of plain flour, a pinch of garam masala, 3sp chilli powder, red food colour and enough salt. Marinate the florets in this batter for ½ hour. Deep fry them like crisp pakodas. This is called as chilli Gobi or Gobi 65.
Then heat a Kadai and pour enough oil. Add chopped spring onions, slit green chillies , chopped capsicums and a little salt. Fry them well. Add 1tbsp soy sauce, ½ sp ajinamoto and 1sp chilli sauce. Fry for a few minutes and then add the fried florets. Mix well.

Cut one medium cauliflower into big florets and put in salted boiling water for 2-3 min (this is to remove any worms). Mix the florets, cournflour, maida (both in equal quantities), garam masala 1sp (optional), turmeric, omam 1 pinch, finely chopped garlic. Add as little water as possible and make a thick paste. Keep this paste for 1/2 to 1 hr in fridge to get a crisp finish. Make small balls & deep fry in oil (u can also add curry leaves, cashew, crushed ginger & garlic together with the balls)

This tastes like gobi manchurian dry.

FRIED VEGETABLES

Ingredients
30 gms potatoes, finely chopped
30 gms French beans, finely chopped
30 gms cauliflower, cut into flowerets
30 gms carrots, finely sliced
30 gms mushrooms, cut into four pieces
30 capsicum, finely sliced
45 gms diced spring onions
30 gms dry onions, chopped
15 gms ajinomoto
60 gms corn flour
Salt to taste
Oil for frying
20 gms red chilies, chopped
Method:
Mix all the vegetables in a bowl, sprinkle water and add dry corn flour to it. Keep aside for 15-20 minutes.
Heat oil in a wide pan till it smokes and fry all the vegetables. Drain out the excess oil from the vegetables on a paper.
Heat 30 ml oil in the same pan and fry the red chilies, green chilies and spring onions for a few seconds.
Add these to the fried vegetables and toss to mix. Sprinkle ajinomoto, salt and toss again to mix.
Transfer to a plate, decorate well and serve hot.

CAULIFLOWER CURRY
Ingredients:
1 cauliflower, cut into small flowerets
1 cup Bengal gram flour
1/2 cup all purpose flour (maida)
1 tsp ginger garlic paste
1/2 tsp chili powder
A pinch of china salt
Salt to taste
A pinch of red coloring (optional)
Oil for frying
2 green chilies, chopped
1 onion, chopped
Mustard, cumin seeds & curry leaves for seasoning
Method:
Soak the cauliflower pieces in salt water for 10 minutes and cook in boiling water for 5 minutes. Remove and allow them to cool.
Mix Bengal gram flour, maida flour, salt, ginger garlic paste, chili powder, china salt and make a fine batter by using water. Also add red coloring if required.
Immerse the cauliflower pieces in the batter and deep fry in hot oil until they are golden brown.
Heat 2 tbsp of oil in another pan. Season with mustard seeds, cumin seeds, curry leaves.
Also add chopped green chilies, onions and fry for a minute.
Now add the fried cauliflower pieces to the seasoning mixture and mix well.
Serve hot.

CAULIFLOWER – SPINACH STIR FRY
Ingredients:
1 cauliflower, cut into florets
300 gms spinach
60 gms ghee or butter
8 flakes garlic, sliced
1 tsp cumin seeds
2-3 onions, sliced finely
4 green chilies, slit lengthwise
1/2 tsp turmeric powder
1 tsp chilipowder
1 tsp garam masala powder
2 tomatoes, skinned & sliced finely
Salt to taste
Coriander leaves for garnishing
Method:
Heat the ghee in a pan, add garlic flakes and saute until golden brown. Add cumin seeds and stir-fry
Add onions, green chilies and saute until golden brown. Add cauliflower and keep stirring frequently till half cooked.
Add spinach and fry for a minute. Sprinkle turmeric powder, chili powder, garam masala powder and stir well.
Add chopped tomatoes and stir fry for another 2 minutes. Lower the heat, sprinkle little water, cover and cook for 5 minutes.
Add salt and coriander leaves. Garnish with roasted garlic flakes and slit green chilies.

Mrs.Mano,

Can u post some Kollu(Horsegram) recipes(other than kollu paruppu & kollu rasam) when u find time...

I once tasted a kollu curry(a bit like korma) as a side dish for chapathi in an hyderabadi friend's party...I was very tasty...I don't know if it is a traditional hyderabad dish or if it is the cook's own creation...If u happen to know the recipe,pls post it...

I guess I'm demanding a lot from U...Very sorry about it...Have lots of doubts & no one to clarify it for me here...:) So pls bear with me for sometime...

CAULIFLOWER BUFFIBIN - Serves 6

Ingredients :

Cauliflower : 2 (big)
Sugar : 3 cups

Heat a pan, add 3 cups of water and 3 cups of sugar till you get one-string consistency. Now add the cauliflowers and cook for 5 minutes till golden brown. Remove from fire and mash it. Add food colour. Your Cauliflower Buffibin is ready to be served.

Cauliflower pickle-

Cauliflower cut into small florets or grate into big hole grater-1 cup
Jeera powder -1tsp
Methi seeds powder- 1/4-1/2 tsp
chilli powder- to taste
salt - to taste
lime juice- to taste

Mix all these and keep for about 1/2 hour so that tastes blend in well.

Then add tadka/tempering/seasoning.
Its ready...
