This is Bhargavi's recipe!
Try out



Bharwaan Masaledaar Karela ( stuffed bittergourd with masala).


You will need,
fairly medium sized karela/bittergourd 5
onions finely chopped /grated 1cup
for the masala grind together
tomato 1
corriander leaves 1/2cup
ginger 2tsp
green chillies 5-6
2tsp of coconut (optional, not very traditional but i like it).
jeera seeds 1tsp
tumeric 1tsp
clove and cinnamon 1/2tsp
oil 2tsp

other ingredients
salt
oil
strings


Method
wash the karela and wipe it with a towel.
lighly scrape the rough outer edges and slit in the middle without breaking the vegetable in half.
with a spoon, try to remove the inner flesh and seeds as much as u can.
In a bowl mix together salt and tumeric 2tsp each.
rub this in each karela evenly and leave it overnight if possible or min 3hrs in room temprature.

Grind the masala without adding any water to it.
mix the chopped onions and add salt for the masala.
remove the marinated karela's and wash them under cold running water for 2mins. throw away the liquid if any.
pat dry the karela's and fill them with the masala paste genrously. tie them with a kitchen string .
heat a kadai /wok.
add oil and place each karela one by one on the wok. cover and cook in medium flame, turning it once a while to get a nice brown color on each sides and fully cooked about 45mins.. (TEST IT BY INSERTING A TOOTHPICK ,IF IT GETS IN VERY EASILY THEN THE KARELA'S ARE TENDER AND WELL COOKED).
serve hot with plain rice or phulkas

One more method is:

Ingredients:
Bitterguard
Onions
Green chillies
Turmeric powder
salt



First peel the skin of the Karela and either apply Salt to it and keep it aaside for an hr or u can cut into small pieces, put them in Lemon water for 1 hr to remove bitterness of Bitterguard.

Now Add oil , mustard seeds,jeera,turmeric powder, hing,green chillies in a Vessel. Fry them for 1min and add onions cut into pieces.Saute onions untill light brown color and add the bitterguard pieces by pressing them tenderly removing water.
Fry for sometime untill bitterguard is cooked .Add salt as required.
If wanted more spicy ,can add Red chillie powder too(optional)
